3 c popcorn, popped, recipe follows
1/4 c basil infused olive oil
2 Tbsp grey salt
freshly ground black pepper
1/2 c freshly grated parmesan
POPCORN
1/4 c olive oil
1 1/2 c popcorn

Steps:

  • 1. Drizzle basil infused oil over the popcorn. Grind grey salt in a spice grinder (a coffee grinder also works well for this purpose) until fine - it will stick to the popcorn more evenly if the crystals are smaller. Add black pepper, then grate parmesan over the popcorn.
  • 2. For Popcorn: Preheat a large cast iron Dutch oven on a stove top over high heat. Add olive oil, then popcorn. As soon as it begins to pop, cover and turn down to medium heat until sound of popping stops, about 3 to 4 minutes.

1/2 cup grated Parmesan
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1/2 teaspoon freshly ground black pepper
1/2 teaspoon fine sea salt

1/2 cup popping corn
3 tablespoons unsalted butter, melted
1 tablespoon olive oil

Steps:

  • Combine the Parmesan, garlic salt, paprika, pepper, salt and turmeric in a small bowl. Combine the popping corn and melted butter in a large pot. Cover and cook over medium heat, shaking the pot with increasing frequency as the popping increases. Continue until the popping is reduced to a couple of seconds between pops, then remove from the heat and transfer the popcorn to a large brown bag. Drizzle the popcorn with the olive oil and sprinkle about 3 tablespoons of the seasoning into the bag. Shake up the popcorn. Sprinkle with additional seasoning to taste and serve warm.

1 cup (1/2 bulb) finely diced fennel
1 cup (1 medium) finely diced, peeled, seeded cucumber
1/2 cup (1/2 small) finely diced red onion
1/2 cup (2 medium stalks) finely diced celery
Gray salt
Fresh coarsely ground black pepper
3 tablespoons extra-virgin olive oil
8 ounces halibut fillet, cut into 1/2-inch pieces
1 tablespoon minced garlic
2 to 3 tablespoons minced, seeded jalapeno
8 ounces medium shrimp, peeled, de-veined, and cut into 1-inch pieces
1 can (6.5 ounces) clam juice
1/4 cup dry white wine
1 pint tiny, ripe cherry tomatoes (preferably Sweet 100s), each quartered

Add the clam juice and wine; bring the mixture to a boil and cook for about 30 seconds. Remove the shrimp from the pan. Continue until the liquid is reduced by half. Return the halibut and shrimp to the pan and stir to coat them with the liquid. Remove the pan from the heat and allow the mixture to cool.
  • When you are ready to serve, stir the tomatoes, fennel fronds, parsley, basil, and vinegar into the chilled tomato juice and vegetables. Spoon the tomato mixture into bowls and top with the cooled seafood mixture. Garnish with a handful of popcorn.
