Orzo and Garbanzo Bean Salad With Basil and Mint image

I make this Orzo salad a lot during the Spring and Summer. I'm totally addicted to it. My whole family loves it and it's perfect for an outdoor picnic or concert where you can bring a meal. Time 40m

Number Of Ingredients 9

4 c chicken broth or water
1 1/2 c orzo pasta, uncooked
1 can(s) garbanzo beans, drained and rinsed
1 1/2 c mixed red and yellow teardrop or grape tomatoes, halved
1/2 c fresh basil, chopped
1/4 c fresh mint, chopped
1/2 c blush wine vinaigrette ( i use brianna's brand, in the salad dressing section)
salt to taste
fresh ground black pepper to taste

Steps:

  • 1. Bring broth to a boil in a large heavy sauce pan over high heat. Stir in Orzo. Cover partially and cook stirring frequently until the orzo is tender but still firm to the bite. About 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely. Toss the orzo with the rest of ingredients and enough blush vinaigrette to coat. You may not use all the vinaigrette. Season the salad with salt and pepper to taste and serve chilled or at room temperature.

Tips:

Choose the right pasta: Orzo is a small, rice-shaped pasta that works well in salads. You can also use other small pasta shapes, such as orecchiette or farfalle. Cook the pasta al dente: This means cooking the pasta until it is tender but still has a slight bite to it. Otherwise, it may become mushy and overcooked. Use fresh herbs and vegetables: Basil and mint are the star ingredients in this salad, so be sure to use the freshest herbs you can find. Fresh vegetables, such as tomatoes, cucumbers, and bell peppers, will also add color and flavor. Make a flavorful dressing: The dressing is what brings all the flavors in the salad together. Be sure to use a good quality olive oil and vinegar. You can also add other ingredients to the dressing, such as lemon juice, garlic, or honey. Chill the salad before serving: This will allow the flavors to meld and the salad to become more refreshing. Garnish the salad with additional herbs or vegetables before serving.

Conclusion:

This basil mint orzo salad is a delicious and refreshing side dish that is perfect for summer gatherings. It is packed with flavor and nutrients, and it can be easily customized to your liking. Simply follow the tips above to make a delicious and healthy salad that everyone will enjoy.
