BARB'S FRESH SALSA

Barb's Fresh Salsa image

This recipe came from my friend Barb, and it's a little different than any other salsa I've had. It's best made with fresh, vine ripe tomatoes. You can vary the quantities of just about everything, but I usually make it by the recipe, except I add lots more cilantro (I LOVE cilantro). I usually add more jalapeno, too, but we like things spicy. The italian dressing gives it a nice zing, and you can use any variety. I like the zesty. This will keep for several days in the fridge, and it just keeps getting better! Prep time is mostly chilling time.

Time 5m

Yield About 1 cup

Number Of Ingredients 6

1 cup finely chopped parsley (1 3/4 ounces/50 grams)
1 1/2 teaspoons finely grated lemon zest (from 1 small lemon)
1/4 to 1/2 teaspoon salt, more to taste
2/3 cup extra-virgin olive oil
1 garlic clove
2 tablespoons red wine vinegar, more to taste

Steps:

  • Combine parsley, zest, salt and olive oil in a medium mixing bowl. Use a rasp grater to finely grate garlic into the bowl. Stir to combine.
  • Just before serving, stir in vinegar. Taste and adjust salt and acid as needed. (Acid will dull the vibrant flavor and color of the herbs over time, so if you plan to store some of the sauce for future use, add acid to only the portion you're using. Sauce, without vinegar, will keep in the refrigerator up to 2 days; bring to room temperature before using.)

Tips:

  • Use ripe, fresh ingredients: The quality of your salsa will depend on the quality of your ingredients. Use ripe, fresh tomatoes, onions, cilantro, and peppers for the best flavor.
  • Choose the right tomatoes: The variety of tomato you use will affect the flavor of your salsa. Roma tomatoes are a popular choice because they are meaty and have a low water content. You can also use cherry tomatoes, heirloom tomatoes, or any other type of tomato you like.
  • Remove the seeds from the peppers: If you don't want your salsa to be too spicy, remove the seeds from the peppers before chopping them. You can also use a milder variety of pepper, such as a bell pepper or poblano pepper.
  • Chop the ingredients evenly: Chop the ingredients for your salsa evenly so that they cook evenly. This will also help to ensure that the salsa has a consistent texture.
  • Use fresh herbs: Fresh herbs, such as cilantro and basil, can add a lot of flavor to your salsa. If you don't have any fresh herbs on hand, you can use dried herbs, but they will not have as much flavor.
  • Season to taste: Once you have assembled your salsa, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or lime juice to taste.

Conclusion:

Fresh salsa is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is easy to make and can be tailored to your own personal taste. With a few simple tips, you can make the best fresh salsa you have ever tasted.
