SPICY GRILLED FISH

Spicy Grilled Fish image

This is a really tasty, economical and different way to enjoy fish! Lots of flavor from the marinade and easy clean up! Winners in my book. I am sure this would work very well on any firm, mild fish. When I made this I was a little crunched in the time department so I only got to marinade it for 1 hour and it was delicious. Plan ahead! This is best marinated for at least an hour but no more than 2 hours. In a pinch, just let it marinate while the grill is heating.

Time 15m

Yield 4 serving(s)

Number Of Ingredients 12

24 ounces catfish fillets or 24 ounces other mild fish
1/4 cup lemon juice
1/4 cup vegetable oil
2 tablespoons low sodium soy sauce
2 tablespoons fresh ginger, finely chopped or 2 teaspoons ground ginger
6 garlic cloves, finely chopped, about 1 Tbsp
3 green onions, chopped, green and white parts
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper, adjust to taste
lemon wedge (optional)
parsley, chopped (optional)

Steps:

  • Combine lemon juice, soy sauce, vegetable oil, ginger, garlic, green onions, minced onion, paprika and cayenne pepper and stir to mix well.
  • Place fish in a zipper seal bag and pour liquid mixture over it. Seal and marinate in the refrigerate for about 1 to 2 hours.
  • Oil grill grate or fish basket really well and preheat grill to medium high. Grill fish for 4 minutes on each side. Flip the fish only once and brush with reserved marinade when flipped.
  • NOTE: Fish is completely cooked when the color turns from translucent to opaque (white) or has reached a 150 degree F internal temperature. Resist the temptation to over-cook fish until it "flakes," which indicates the fish is becoming dry.

CITRUS-SPIKED SEA BASS

Places oranges on your barbecue to stop your fish from sticking- serve with a lemony salad with capers, green olives and watercress

Provided by Barney Desmazery

Categories     Main course

Time 30m

Number Of Ingredients 10

2-3 large oranges
zest 1 lemon (use the juice below)
1 tbsp olive oil
4 x 300g whole small sea bass , scaled, gutted and slashed a few times down each side
2 oranges , segmented
juice 1 lemon
4 tbsp olive oil
2 bags watercress
handful small capers
handful pitted green olives , roughly chopped

Steps:

  • Finely grate the zest of 1 of the oranges and add to the lemon zest. Mix with the olive oil, then drizzle over the fish and season. Cut the rest of the oranges into slices about 5mm thick. When the coals are ashen, arrange the orange slices over the barbecue in groups the length of each fish. Char the orange slices on 1 side, then flip them over and lay the fish on top of them - this stops the fish sticking. Barbecue the fish for 5-8 mins on each side (turning them carefully), or until the flesh flakes away easily when prodded.
  • While the fish is barbecuing (or beforehand), make the salad. Put the orange segments in a large bowl with the squeezed juice from the rest of the oranges and the lemon juice. Season and stir in the olive oil. When the fish is cooked, toss the watercress in the orange dressing with the capers and olives. Serve the fish with the salad.

Tips:

  • Choose the right fish: Firm-fleshed fish like salmon, tuna, or halibut are best for barbecuing as they can withstand the heat without falling apart.
  • Marinate the fish: Marinating the fish in a flavorful mixture of herbs, spices, and oil helps infuse it with flavor and keep it moist during cooking.
  • Cook the fish over medium heat: High heat can easily overcook the fish, so it's best to cook it over medium heat to ensure it cooks evenly throughout.
  • Use a fish grilling basket: A fish grilling basket helps keep the fish intact and prevents it from sticking to the grill grates.
  • Flip the fish only once: Flipping the fish too often can cause it to break apart. It's best to flip it only once, when the fish is cooked about halfway through.
  • Baste the fish: Basting the fish with the marinade or a flavorful sauce helps keep it moist and adds extra flavor.
  • Cook the fish until it is opaque and flakes easily: The fish is cooked when it is opaque in the center and flakes easily when tested with a fork.

Conclusion:

Barbecued spiced fish is a flavorful and healthy dish that can be enjoyed for lunch or dinner. By following the tips above, you can create a delicious barbecued fish that your family and friends will love. This versatile dish can be served with a variety of sides, such as grilled vegetables, rice, or potatoes. You can also add your own favorite spices and herbs to create a unique flavor profile.
