1 cup peach preserves or jam
1 large clove garlic, minced (1 teaspoon)
2 tablespoons olive oil
1 tablespoon plus 1 teaspoon soy sauce
1 tablespoon dry mustard
1/4 teaspoon cayenne pepper
1 teaspoon salt, plus more to taste
1/4 teaspoon freshly ground black pepper
4 chicken breasts (about 5 pounds), split
4 ripe peaches, cut in half and pitted

Steps:

  • Preheat grill to medium hot. In a medium mixing bowl, combine preserves, garlic, olive oil, soy sauce, dry mustard, cayenne pepper, salt, and black pepper, and mix well to combine.
  • Sprinkle chicken breasts with additional salt and pepper, and place, skin side down, on the grill. Cook the chicken about 10 minutes on each side before brushing the upturned side with glaze. Continue cooking chicken for another 10 to 12 minutes, turning it every 3 to 5 minutes and brushing each upturned side with glaze every time, until the chicken is cooked through. Move chicken to the oven or a cooler part of grill if it gets too dark before it is cooked through.
  • Place peach halves on the grill, cut side down, and grill 2 minutes. Turn, and brush the tops with glaze. Grill 3 to 4 minutes more, until the peaches are soft and the cavities fill with juices. Transfer the cooked chicken and peaches to a serving platter.

4 boneless chicken breasts
1/4 cup ketchup
3 tablespoons cider vinegar
1 tablespoon prepared horseradish
2 tablespoons brown sugar (firmly packed)
1 garlic clove (minced)
1/8 teaspoon thyme
1/4 teaspoon black pepper

Steps:

  • Make Sauce: In a small saucepan combine ketchup, cider vinegar, horseradish, brown sugar, minced garlic, thyme and black pepper; whisk together to mix ingredients. Bring to a boil over medium/low heat. Cook about five minutes until thickened. Remove from heat.
  • Brush chicken breasts with sauce (both sides) and place in foil lined pan.

1 tablespoon chili sauce
1 tablespoon brown sugar (dark brown sugar, packed)
1 tablespoon cider vinegar
1 garlic clove (crushed)
1 pinch black pepper
4 large chicken breasts (boneless and skinless , about 6 oz. each)
1 tablespoon olive oil (this ingredient and the following ones are for the crumb topping.)
1 garlic clove (minced)
1/2 cup breadcrumbs (fine soft)
1/2 teaspoon thyme leaves (fresh or pinch of dried thyme)
1 pinch salt and pepper

Steps:

  • Crumb Topping : combine the 8th,9th,10th,11th,and 12th ingredients to make the crumb topping.
  • Barbecue Sauce:
  • 1. combine the ketchup, chili sauce, brown sugar, vinegar and garlic in a small saucepan. Bring to boil over the medium low heat. Cook uncovered, stirring frequently, until thickened, about 5 minutes. remove from heat. add a grinding of black pepper.
  • 2. Heat the oven to 400 degrees F. Place a sheet of heavy-duty alumiunum foil on a baking sheet and crimp the edges up slightly so the juices won't drip over.
  • 3. Coat the undersides of the chicken breasts lightly with the barbecue sauce. Place the breasts sauce side down, on the foil lined baking sheet. Coat the tops of the chicken breasts with the remaining barbecue sauce, dividing it evenly.
  • 4. meanwhile, heat the olive oil in a medium skillet Add the garlic and saute over medium heat for 1 minute. Add the crumbs, thyme and a pinch of salt and a grinding of black pepper. Saute the crumbs, stirring frequently, until lightly toasted, about 5 minutes. Spoon the crumbs evenly on top of the chicken breasts.
  • 5. Bake the Chicken for 15 minutes. Let stand until slightly cooled. Cut each breast into 1/2 inch slices.

FOR THE MARINADE:
1/4 cup ketchup
2 tablespoons Dijon style mustard
2 tablespoons honey
2 tablespoons cider vinegar
2 tablespoons canola oil
1 tablespoon dark brown sugar
2 teaspoons Worcestershire sauce
2 teaspoons dry mustard
1 teaspoon paprika
1 teaspoon granulated garlic
1 teaspoon granulated onion
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper
4 chicken breast halves (with bone and skin), 10 to 12 ounces each

Steps:

  • TO MAKE THE MARINADE: In a medium bowl whisk together the marinade ingredients. Rinse the chicken breasts under cold water and pat dry with paper towels. Place in a large, resealable plastic bag and pour in the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl, and refrigerate for 4 to 6 hours, turning occasionally. Remove the breasts from the bag and discard the marinade. Grill, bone side down, over Indirect Medium heat until the juices run clear and the meat is no longer pink at the bone, 30 to 40 minutes.
