1/2 cup packed brown sugar

1/4 cup mayonnaise
1 tablespoon milk
1 tablespoon plus 1 1/2 teaspoons white-wine vinegar, divided
1/2 cup very finely shredded carrot (1 medium)
1 tablespoon thinly sliced fresh chives
1/2 cup bottled tomato-based barbecue sauce
1/4 teaspoon cayenne
1 1/2 pounds ground pork
4 kaiser or soft rolls, split and grilled
Equipment: an adjustable-blade slicer

Steps:

  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium heat for gas).

1 lb fresh ground pork
1 apple, peeled, cored and grated
2 teaspoons cajun seasoning
1 lb onion
1 tablespoon fresh cilantro, chopped
2 tablespoons corn oil
8 -12 Canadian bacon, slices
salt and pepper

Steps:

  • Cook the sweet potato in a pan of lightly salted boiling water for 15-20 minutes, or until soft when pierced with a fork. Drain well, then mash and set aside.
  • Place the ground pork in a bowl, add the mashed potato, grated apple, and Cajun seasoning. Grate 1 of the onions and add to the pork mixture with salt and pepper to taste and the chopped cilantro. Mix together, then shape into 4-6 equal-size burgers. Cover and let chill for 1 hour.

1/4 cup grated romano cheese
1/2 tsp. whole fennel seed
dash each pure chili powder, dry mustard & cinnamon

  • Preheat grill to high heat. Saute onion, garlic and all spices except dry mustard in oil if desired, allow to cool slightly. In a large bowl, gently knead in the spices, apples, garlic & onion.
