1 tablespoon olive oil
1 green bell pepper, chopped
1 onion, chopped
1 carrot, shredded
2 celery stalks, chopped
½ tablespoon paprika
½ teaspoon salt

¼ teaspoon crushed red pepper
1 pinch ground cinnamon
1 pinch ground cloves
¼ cup water
⅛ cup red wine
1 cube beef bouillon
2 tablespoons half-and-half
2 potatoes, peeled and sliced

2 tablespoons olive oil
1 onion, chopped
3 garlic cloves, chopped
2 green peppers, seeded and chopped
8 green onions, thinly sliced
1 lb lean ground beef
2 tomatoes, chopped
1 cup barbecue sauce
4 large baking potatoes, thinly sliced
1 cup cheddar cheese, shredded

Steps:

  • Heat oil in non-stick skillet.
  • Add onion, garlic, peppers and green onions, and cook until onion is starting to brown.
  • Add ground beef and cook, stirring occasionally until cooked through.
  • Add tomatoes and season with salt and pepper.

This would be a great way to use left over "real" mashed potatoes (use about 5-6 cups prepared) and homemade shredded barbecue. Instead of beef, barbecued pork or chicken could also be used.

2 cups water
1/4 cup butter or 1/4 cup margarine
1 1/3 cups milk
