BANANA YEAST BREAD

Banana Yeast Bread image

Though our two children (now grown; we have one granddaughter) dislike bananas, they've always enjoyed this. It's been a standby since my grandmother shared the recipe before I was married. Cooking is fun for me...but I have to admit I would rather bake than make a meal. This yeast bread is my favorite. -Maralee Meyer, Milford, Nebraska

BANANA YEAST BREAD

Banana Yeast Bread image

Time 1h45m

Number Of Ingredients 9

3/4 cup milk
1/2 cup butter
1/2 cup sugar
5 - 6 cups all-purpose flour
2 packages active dry yeast (4 1/2 teaspoons)
1 teaspoon salt
2 large eggs + 1 large egg
3 bananas, mashed
1 teaspoon water

Steps:

  • In a small saucepan over medium heat add milk, butter and sugar. Cook until butter is melted and sugar is dissolved. F - 130Once milk mixture is at a temperature you are comfortable with pour mixture into your stand mixer. Add salt, 2 eggs & bananas. Mix well. Add yeast and 2 cups of flour. Mix for 3 minutes to allow the yeast to truly mix into the dough. Add in additional 3 cups of flour, 1/2 cup at a time, mixing well after each addition. Add UP TO 1 more cup of flour a little at a time until dough no longer sticks to the side of the mixing bowl while mixing. Continue mixing dough for 5 more minutes. You can hand knead here, however I prefer to let me mixer do the job for me! Butter or spray a large mixing bowl. Place dough inside bowl and turn once to coat entire dough with butter or oil. Cover with a cloth or plastic wrap and let rice in a draft free spot until double in size. This takes about 45 minutes. Prepare 2 baking sheets by place parchment paper, non-stick foil, a Silpat or greasing the pans. Scoop out half the dough and form into a round loaf. Place loaf onto prepared baking sheet. Cut decorative slits in the top - loaf WILL rise while baking and this will help it keep it's beautiful shape. Scoop out other half and do the same for your second baking sheet. Cover again, and let rise again. Should take another 45 minutes. In a small bowl beat 1 egg and 1 teaspoon of water together. Brush this mixture on top of each loaf. Bake at 375*F for 20 - 30 minutes. My oven only required 20 minutes, however mine bakes a bit hot. If you are unsure if dough is done it should have a nice golden color and sound hollow when you thump the bread with your finger.

ABM BANANA YEAST BREAD

Abm Banana Yeast Bread image

This is not a traditional sweet bread but it is awesome hot out of the bread machine with a little butter. Unfortunately this is not a recipe you can set up on a timer to start later. You will need to "babysit" it for the mixing cycle as the moisture of bananas can vary greatly and you may need to add more flour or water if the moisture content needs adjusting. The prep time includes the babysitting of your dough ball - the cook time is the full bread machine cycle.

Time 3h10m

Yield 1 loaf

Number Of Ingredients 9

3 overripe bananas
1/4 cup molasses
2 tablespoons butter
3 cups white bread flour
1/2 cup white bread flour, to adjust moisture content
1/3 cup powdered milk
3/4 teaspoon salt
2 1/4 teaspoons active dry yeast
cinnamon (optional) or spices (optional)

Steps:

  • Layer ingredients in machine in the order listed or as per your machines instructions.
  • Set to 1.5 lb loaf and press start.
  • Towards the end of the mix cycle your dough ball should move freely in the machine without sticking to the sides (needs more flour) and should pick up all the loose ingredients (needs more water). One your dough ball looks fine you can let the machine do the rest of the work for you.

Tips:

  • Utilize overripe bananas: Overripe bananas are ideal for banana bread as they add natural sweetness and moisture to the loaf.
  • Cream butter and sugar thoroughly: This step helps incorporate air into the mixture, resulting in a light and fluffy texture.
  • Add eggs one at a time: Gradually adding eggs helps prevent the batter from curdling.
  • Use ripe bananas: Ripe bananas will give your bread a sweeter flavor and a more moist texture.
  • Don't overmix the batter: Overmixing can result in a tough, dense loaf of bread.
  • Let the bread cool completely before slicing: This will help prevent the bread from crumbling.

Conclusion:

With its moist, flavorful crumb and sweet banana aroma, homemade banana bread is a classic treat that is sure to please everyone. Whether you prefer a traditional recipe or a variation with added nuts, chocolate chips, or spices, there is a banana bread recipe out there for everyone. So next time you have overripe bananas on hand, be sure to give one of these recipes a try. You won't be disappointed!
