Time 35m

Number Of Ingredients 19

2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon allspice
1/2 teaspoon nutmeg
Pinch cloves
1/2 cup 1 stick unsalted butter, room temperature
1 1/2 cups granulated sugar
1 1/2 cups mashed ripe bananas (about 3 large)
1 cup sour cream
2 large eggs
1 8-ounce block light or regular cream cheese, room temperature
3 tablespoons unsalted butter (room temperature)
2 cups powdered (confectioner's sugar)
1/2 teaspoon vanilla
Pinch salt
Milk (only if needed for thinning the icing to a spreading consistency)

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Butter and flour a 13-inch x 9-inch baking pan.
  • In a medium bowl, stir together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, allspice, and cloves. Set aside.
  • In the bowl of a stand mixer fitted with the beater blade attachment or in a large bowl using an electric mixer, beat together the butter and sugar on medium speed until pale and fluffy, about 1 - 2 minutes. Add the eggs one at a time and mix until well incorporated. Mix in the sour cream and the bananas.
  • Pour in the flour mixture, a little bit at a time, beating continuously until well-incorporated.
  • Spread batter into the prepared pan.
  • Bake for about 25 minutes, or until the top of the cake is golden and a toothpick or tester inserted into the center comes out clean. Remove the cake from the oven and place on a wire rack to cool completely.
  • To make the frosting, fit a stand mixer with the beater attachment or use a large bowl and an electric hand mixer. On medium speed, beat together the cream cheese and butter until smooth. Turn the mixer to low and gradually add the powdered sugar. Once all the powdered sugar has been added, increase the speed to medium and beat for another 30 seconds. Add the vanilla and pinch salt; beat for another minute or so until smooth. Add a little milk (a couple of teaspoons at a time) if the frosting seems too stiff to spread.
  • Spread frosting onto completely cooled cake. Cut into 12 pieces and serve. Cover and store leftover cake in the refrigerator; it keeps well (and keeps getting better) for 3 - 4 days.

This is a small snack cake. Good eaten as is, without frosting, but a cream cheese frosting or powdered sugar also good. Also, some chopped pecans or walnuts can be added.

Categories     Cakes

Time 50m

Number Of Ingredients 13

1/2 c unsalted butter, softened
3/4 c light brown sugar, packed
1 large egg
1/4 c buttermilk
1 tsp vanilla extract
2 ripe bananas, mashed
1 1/2 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg

Steps:

  • 1. Preheat oven to 350℉ (180℃). Coat a 8-inch round or square baking pan with nonstick cooking spray.
  • 2. In a large mixing bowl, with electric mixer, cream butter and brown sugar. Beat in egg, buttermilk, vanilla, and mashed banana until blended.
  • 3. In a bowl, combine dry ingredients and spices.
  • 4. Mix the dry ingredients into the butter mixture until moistened. Do not overbeat.
  • 5. Pour batter into prepared pan and spread evenly. Bake 25 to 30 minutes, or until a wooden skewer poked into middle of cake comes out clean.
  • 6. Cool in pan on wire rack for about 20 minutes. Can be left in pan or inverted onto cake plate. Can be frosted, but I serve it plain, with a scoop of vanilla ice cream, or a dollop of vanilla yogurt or drizzle of caramel ice cream topping.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your cake will be. Look for bananas with yellow skins that are covered in brown spots.
  • Mash the bananas well: Make sure to mash the bananas until they are completely smooth. This will help to create a moist and tender cake.
  • Use a combination of spices: The spices in this recipe - cinnamon, nutmeg, and ginger - give the cake a warm and flavorful taste. Feel free to experiment with other spices, such as allspice, cloves, or cardamom.
  • Don't overmix the batter: Overmixing the batter can result in a tough cake. Mix the ingredients just until they are combined.
  • Bake the cake until a toothpick inserted into the center comes out clean: This is the best way to tell if the cake is done baking.

Conclusion:

This banana spice snack cake is a delicious and easy-to-make treat. It's perfect for breakfast, dessert, or a snack. The cake is moist and flavorful, and the spices give it a warm and inviting taste. Plus, it's made with wholesome ingredients like bananas, oats, and yogurt, so you can feel good about eating it.
