½ cup creamy natural peanut butter
2 eggs
¼ cup flax seed meal
¼ cup almond flour
¼ cup plain non-fat Greek-style yogurt
¼ cup agave nectar
2 tablespoons vanilla extract
1 tablespoon powdered stevia baking blend
1 tablespoon ground cinnamon
1 teaspoon maple-flavored extract
1 teaspoon baking powder
½ teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 15 muffin cups or line with aluminum foil liners.

3/4 cup brown sugar
1/2 cup unsweetened cocoa powder
2 teaspoons baking soda
3 large overly ripe bananas, mashed
1/2 cup plain fat-free yogurt
2 egg whites
2 teaspoons vanilla extract
1 teaspoon cinnamon
1/2 cup pecans, chopped
1/2 cup raisins
vegetable-oil cooking spray
flour, for dusting pans

Steps:

  • Preheat oven to 350°F Spray 12 muffin tins with cooking spray and dust with flour.
  • Set aside.
  • Combine flour, brown sugar, cocoa, and baking soda. Add bananas, yogurt, egg whites, vanilla, pecans, and raisins.
  • Stir.

1 1/2 cups flour
1/4 cup Splenda sugar substitute
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 egg whites
3 bananas (ripe & mashed)
1/3 cup skim milk (I use Lactaid Fat Free Milk)
1 cup applesauce (Sugar Free)
4 tablespoons protein powder (I use 4 scoops Vanilla Whey Protein )
1 cup walnuts (chopped)

Steps:

  • Bake at 400 degrees.
  • Grease muffin tins with Pam spray. Combine flour, Splenda, baking powder, baking soda, salt & cinnamon and mix together. In a bowl, beat egg whites with a wisk or fork. Stir in mashed banana, applesauce, nuts and milk. Add flour mixture and mix together. Spoon into muffin tins.
  • Bake for 20-25 minutes. Stick a toothpick in the center of muffin to be sure cooked thru. Cool in pan for 5 minutes then remove and cool on a wire rack.
