3 eggs
1 1/2 c canola or vegetable oil
2 ripe bananas, mashed
1 c coconut, flaked
1 small can crushed pineapple, drained well
2 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
2 1/2 c flour
1 c nuts - crushed (optional)
FROSTING
1 c butter or margarine
1 c white sugar
5 Tbsp flour
1 c milk
1 tsp vanilla extract

  • 1. Beat the sugar and oil together well. Add the eggs and beat, just until combined. Next, stir in the bananas, coconut, and pineapple. Finally, stir in all of the dry ingredients, combining well.
  • 2. Grease and flour a 13x18 jellyroll pan. Pour the batter into the pan and bake for 30-35 minutes at 350 degrees. Do not overbake. Cool completely, before frosting with the recipe below or a cream-cheese frosting.
