4 very ripe large bananas
1 cup packed light brown sugar
3/4 cup butter, melted and cooled
2 large eggs

1/2 cup pecans, toasted and chopped

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup regular-sized muffin tin with paper liners.

1/2 cup butter
1/2 cup sugar
1 cup oat bran
1 egg
2 tablespoons water
1 1/2 cups mashed bananas
1 1/2 cups whole wheat pastry flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
1/2 cup chopped pecans

Steps:

  • Preheat the oven to 350°F.
  • Spray your mini muffin pans with non stick spray.
