½ cup butter, softened
1 cup brown sugar
2 eggs
1 tablespoon vanilla extract
4 very ripe bananas, mashed
2 cups all-purpose flour
3 teaspoons baking powder
½ teaspoon salt
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition. Stir in vanilla and banana. In a separate bowl, sift together flour, baking powder, and salt.

This is a delicious recipe from the cookbook "Eating For IBS" by Heather Van Vorous. Not only is it the best banana bread I've ever tasted, it's low fat and very safe for people with IBS! If eggs aren't a problem for you feel free to substitute 3 eggs for the 6 egg whites. Please note that the bananas have to be super-ripe for this recipe. IF THEY'RE NOT BLACK, THEY'RE NOT READY! This recipe doubles or triples easily, and extra loaves freeze well.

3 1/2 cups all-purpose unbleached white flour
1/2 teaspoon baking powder
2 teaspoons baking soda
1/2 teaspoon salt
6 organic egg whites (or 3/4 cup Egg Beaters)
1/3 cup canola oil (or vegetable oil)
1 1/3 cups brown sugar
1 tablespoon vanilla
3 cups mashed black bananas (6-8 bananas)

Steps:

  • Preheat oven to 350 degrees F.
  • Sift flour, baking powder, baking soda, and salt into a large bowl and whisk with a metal whisk until well blended.
  • In a large bowl blend the egg whites, oil, brown sugar, vanilla, and mashed bananas with an electric mixer until creamy.
  • Add dry ingredients to wet and with a few swift strokes blend by hand until smooth.
  • Pour into non-stick loaf pans sprayed with cooking oil and bake for 50-60 minutes or until a toothpick or cake tester inserted into the center of the loaf comes out clean.

2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2/3 cup milk
1 tablespoon vanilla extract
3 large ripe bananas, mashed
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine flour, baking powder, sugar, salt, cinnamon, and nutmeg in a large bowl. Measure out the milk and add the vanilla extract to it. Whisk together the dry ingredients and add in milk and vanilla, stirring to combine. The mixture will still be dry. Add in mashed bananas and mix. Add in melted butter and stir until batter is somewhat smooth. Heat a skillet or grilled on medium heat. Using a 1/3 cup measure, spoon batter into rounds and cook until bubbles form on top - about 2-3 minutes. Flip and cook for a minute or two more. Repeat with remaining batter. Serve hot with butter and syrup, or the vanilla maple glaze. Note: if you don't have/can't find whole wheat pastry flour, use 1 cup of regular whole wheat and 1 cup of all purpose. 1 ¼ cups light brown sugar
½ cup butter, softened
1 egg
1 teaspoon cinnamon
1 teaspoon vanilla extract
¼ cup whole milk

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Place the bananas into a large plastic zipper bag, seal the bag, and smoosh the bananas with your fingers until very well mashed. Set the bananas aside. Place the brown sugar and butter into a mixing bowl, and mix on medium speed with an electric mixer until light and fluffy, 1 to 2 minutes. Cut a corner from the plastic bag, and squeeze the mashed bananas into the bowl of brown sugar mixture. Switch the mixer to low speed, and gradually beat in the flour, baking soda, baking powder, and kosher salt just until the batter is smooth, about 1 minute. 1 c brown sugar, light
1 stick real butter
2 large eggs
2 c mashed bananas,(aprox 3or4)
1 tsp real vanilla
2 c all purpose flour
3 tsp baking powder
1/2 tsp salt
1/2 c finely chopped nuts (pecans or walnuts) opt

Steps:

  • 1. Preheat oven to 350 deg and then spray coat the bread pan and then sprinkle a little flour around inside to coat the bottom and sides.Can also use spray release if available.
  • 2. Using a mixer on medium setting,cream together sugar and butter.
  • 3. Add eggs one at a time into mixture,beating well after each on medium speed.
  • 4. Add the bananas into mixture one at a time,breaking them up as you add them,making sure no strings from skins are on them.
  • 5. Combine flour,baking powder and salt into creamed mixture now.Slow mixer to medium low speed.
  • 6. Add nuts if desired at this point.
  • 7. Pour into bread pan and place into middle of oven.
  • 8. bake at 350 degrees for approximately an hour. Check to see if done when inserting toothpick into middle it comes out clean after an hour has passed.This is a heavy bread and ovens do vary!
  • 9. Remove from oven when done and turn out onto wire rack.Let it cool completely.Top will be crusty and cracked. Makes 1 loaf
