4 large shallots, finely chopped
1/2 cup chicken broth (or 1/2 cup water plus 1/2 chicken bouillon cube)

1 tablespoon butter

Steps:

4 boneless skinless chicken breasts
1/2 cup flour
3 tablespoons olive oil
12 cloves garlic, minced
2 cups chicken stock
2/3 cup balsamic vinegar
1 tablespoon sugar (or honey)
1 tablespoon sesame oil
1 teaspoon red pepper flakes
2 tablespoons cornstarch
4 tablespoons water
salt

Steps:

  • Dredge chicken breasts in flour.
  • Shake off excess.
  • In a large skillet, heat oil over medium high heat.
  • Add chicken and cook for 3 to 4 minutes.
  • Add garlic.
  • Flip chicken and continue cooking 3 to 4 minutes.

1 cup plus 2 tbsp red wine (Cabernet Sauvignon or Pinot Noir)
1 cup balsamic vinegar
1 shallot, peeled and halved
1 tbsp butter, cut into 2 pieces
Meat and vegetables
4 tsp extra-virgin olive oil
1 large white onion, peeled and sliced 1/4 inch thick
2 medium zucchini, trimmed and sliced 3/4 inch thick
4 trimmed filets mignons (4 oz each) or top-round steaks (use organic meat, if possible)

Steps:

  • For sauce:
  • In a saucepan, cook wine, vinegar, and shallot over medium-high heat until reduced to 1/3 cup. Remove from heat; discard shallot. Whisk in butter, one piece at a time. Season with salt and freshly ground pepper to taste. Keep warm until ready to serve.
  • For meat and vegetables:

  • Cut beets into 1/4-inch-thick slices. In a deep 9-inch skillet heat oil over moderately high heat until 375°F. on a deep-fat thermometer. Working in batches, dip beet slices in batter and fry, without crowding, until golden and crisp, about 1 minute on each side, making sure oil returns to 375°F. before adding next batch. Transfer beets as fried to paper towels and drain. Beets may be made 2 hours ahead and reheated on a baking sheet in a 425°F. oven 10 minutes.
  • Serve beets with sauce on the side for dipping.

1/2 c dry red wine
1/3 c sugar
1 pear peeled and diced
6 Tbsp veal demi glace
2 Tbsp balsamic vinegar
4 duck breast
salt and pepper

Steps:

  • 1. Score the skin side of the Duck breasts. Season with salt and pepper and set aside. In a medium saucepan and the wine and sugar and bring to a boil. Add the pears and cook until reduce by about 3/4. Strain the sauce through a fine mesh strainer and discard the solids. If you want a thicker sauce puree in food processor until smooth.
  • 2. Add the red wine mixture to a saucepan and add the demi glace, and Balsamic vinegar. Cook until desired thickness.
  • 3. in a cast iron pan add the duck breast skin side down. Cook about 10 minutes until the fat is rendered and the skin side is crisp. Turn over and cook about 5 more minutes for medium rare.
  • 4. Serve with sauce
