- In a large pot or skillet add 2 tablespoons of canola oil oh high heat.
- Season the pot roast with the salt and pepper.
- Add the pot roast to the pan and brown on both sides, 3-5 minutes on each side.
- Add the meat to the slow cooker.
- Add the onions into the pan you browned the beef in and cook for 1-2 minutes.
- If you have space around the meat in the slow cooker add in some small potatoes and carrots.
- Top the beef with the onions, garlic, thyme and bay leaf.
- In a small cup add the beef base (if using) to the balsamic vinegar and whisk.
- Top the beef with the balsamic mixture, red wine and brown sugar.
- Cook on low for 6 to 8 hours.
- Remove bay leaf before serving.
- To make the sauce into a glaze, strain the liquid out after it is done cooking.
- Spoon off the fat and discard.
- Add the remaining sauce to a small pan and cook in a saucepan on medium heat until thickened, about 8-10 minutes.
- If you want a stronger balsamic flavor, add in another 2 tablespoons of balsamic vinegar to the sauce before cooking it down in the saucepan.

- If this has not been done already, tie the meat around its "waist" with cooking twine so it doesn't fall apart during cooking.
- Heat oven to 350°F Combine the porcini and broth in a small saucepan and bring to a boil. Remove from heat and let stand for 10 minutes.
- Remove the porcini with a slotted spoon, coarsely chop, and set aside. Strain the broth through a fine sieve and set aside.
- Rub the meat with the salt and pepper. Heat 2 tablespoons of the oil in a roasting pan or large Dutch oven over medium-high heat.
- Cook the meat until well browned, about 2 to 3 minutes per side. Transfer the meat to a plate and set aside.
- Reduce heat to medium, add the remaining oil, onions, cremini mushrooms, garlic, and rosemary to the pan and cook, stirring frequently, until the mushrooms and onions are tender, about 5 to 7 minutes.
- Return the meat to the pot and add the porcini, strained broth, vinegar, and sugar. Over high heat, bring to a boil.

- Coat a large roasting pan with olive oil and bring to a high heat. Season the brisket generously with salt. Add the brisket to the pan and brown well on both sides. Remove the brisket from the pan and reserve.
- Preheat the oven to 375 degrees F.
- Lower the heat to medium, ditch the excess oil, and add the bacon and reserved skin to the pan with a little more oil. Cook the bacon, stirring occasionally, until the bacon is crispy and has let out a lot of fat. Add the onions and celery. Season with salt and cook until they are very soft and aromatic, 7 to 8 minutes. Add the garlic and cook for another 2 to 3 minutes. Toss in the mushrooms and cook until they are soft and wilted. Add the balsamic vinegar and reduce it by half. Taste it - it will be very vinegary, but that's ok, don't worry. Season with salt, if needed. Lay the brisket on top of the veggie mix and add the chicken stock to the pan until it just covers the brisket. Add the bay leaves and thyme.
- Cover the pan with foil and roast in the oven. Roast for 1 hour, check the brisket, and turn it over. Add more stock if the liquid level has reduced. Cover the pan again and return it to the oven for another hour. Remove the foil and roast for 30 minutes more.
- Remove the roasting pan from the oven, transfer the brisket to a cutting board, cover with foil, and let rest for 20 minutes.
- Skim off any excess fat from the cooking liquid. If the vegetables are swimming in liquid, reduce the liquid on the stovetop over medium-high heat. You want the sauce to be soupy. Taste the liquid and re-season if needed. Slice the brisket against the grain on the bias. Serve topped with the onion-mushroom mixture and sprinkle with chopped chives.
