I'm not a fan of chicken, but I loved this stew. The sauce was so flavorful and the chicken was so tender.

I love that this stew can be made in the slow cooker. It's so easy to just throw everything in the pot and let it cook all day.

This stew is a great way to use up leftover chicken. I always have a few pieces of chicken left over after I make a roast chicken, and this is the perfect way to use them up.

This stew is so versatile. You can add whatever vegetables you like. I also like to add a cup of frozen peas at the end.

I used a can of diced tomatoes with green chilies instead of the tomato sauce. It gave the stew a little bit of a kick.

I added some chopped carrots and celery to the stew for extra vegetables.
