Tips:

  • Choose ripe, flavorful tomatoes: Roasting intensifies the sweetness of tomatoes, so it's important to start with good ones. Look for tomatoes that are deep red in color and have no blemishes.
  • Don't overcrowd the pan: When roasting tomatoes, it's important to give them enough space so that they can roast evenly. If you overcrowd the pan, the tomatoes will steam instead of roast.
  • Use a high-quality balsamic vinegar: Balsamic vinegar is the key ingredient in this dish, so it's important to use a good one. Look for a balsamic vinegar that is aged for at least 12 years and has a rich, complex flavor.
  • Don't overcook the chicken: Chicken breasts can dry out quickly, so it's important to cook them over medium heat and to not overcook them. The chicken is done cooking when it reaches an internal temperature of 165 degrees Fahrenheit.

Conclusion:

This balsamic chicken with roasted tomatoes is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is tender and juicy, the tomatoes are sweet and flavorful, and the balsamic vinegar adds a touch of acidity and complexity. This dish is sure to be a hit with your family and friends.
