These spinach, feta, and turkey meatballs are quick and easy to make, easy to freeze, and taste great when reheated. My son and I call these "Combine Nuggets." Did you know that a combine is a giant tractor that harvests crops from the field? Well, I most certainly didn't until my 3-year-old told me! Therefore, thanks to the hardworking combines we can put the green things in our nuggets.

BAKED TURKEY MEATBALLS WITH QUINOA

Baked Turkey Meatballs with Quinoa image

This easy recipe is a lighter take on an Italian comfort food favorite. We're bypassing the ground beef and skipping the spaghetti but still packing a whole lot of flavor into each spherical bite. Breadcrumbs soaked in milk help seal in the moisture, while baking the meatballs in a mini muffin pan helps them brown evenly (but a baking pan works well, too!).

Provided by Kelly Senyei

Categories     main-dish

Time 30m

Yield 6 servings

Number Of Ingredients 11

Nonstick cooking spray
1/4 cup whole milk
1/4 cup breadcrumbs (Italian or plain)
1 cup uncooked quinoa
1 1/2 pounds ground turkey
1 large egg
2 tablespoons minced garlic
2 tablespoons chopped fresh parsley
1/4 cup grated Parmesan, plus more for serving
Kosher salt and freshly ground black pepper
1 cup homemade or store-bought marinara sauce, heated

Steps:

  • Preheat the oven to 500 degrees F. Generously coat a nonstick mini muffin pan or baking pan with cooking spray.
  • In a small bowl, stir together the milk and breadcrumbs. Let the mixture sit for 5 minutes.
  • Meanwhile, prepare the quinoa according to package directions.
  • In a large bowl, combine the ground turkey, egg, garlic, parsley, Parmesan, 1/2 teaspoon salt, 1/4 teaspoon pepper and the soaked breadcrumb mixture. Use your hands to thoroughly combine the mixture and then shape it into balls using 2 to 3 tablespoons of meat per meatball.
  • Arrange the meatballs in the muffin pan or in a single layer in the prepared baking pan. Bake until the meatballs are cooked through, about 15 minutes.
  • When ready to serve, divide the quinoa among plates, then place the meatballs on top. Spoon the warm marinara sauce over the meatballs and garnish with Parmesan.

BAKED GROUND TURKEY PORCUPINE MEATBALLS

Baked Ground Turkey Porcupine Meatballs image

My mom used to make porcupine meatballs in her pressure cooker. When I did not have a pressure cooker, I came up with this adaption by baking the meatballs. Even though I've also reduced some of the fat and cholesterol these are still a huge favorite of my family and friends. Family tradition is to serve these with mashed...

Time 2h

Number Of Ingredients 9

2 lb lean ground turkey
1/2 c uncooked long grain rice
1/2 c egg beaters, or egg substitute
1 medium onion, finely chopped
1 tsp mrs. dash onion herb seasoning
sea salt & freshly ground pepper to taste
2 can(s) campbell's healthy request cream of tomato soup
1 Tbsp worcestershire sauce
1 can(s) water

Steps:

  • 1. Mix first 6 ingredients well; shape into 24 meatballs; put into a lightly sprayed 2 qt. baking dish. (I generally use a 9X13", or slightly larger glass dish)
  • 2. This is my "easy meatball assembly" trick: Cover your cutting board with wax, or parchment paper. Take the meatball mixture and shape into a long, thin rectangle; Use your knife to score the meat into even size portions; pinch off segments & roll well to form the meatballs; Place into greased pan.
  • 3. Preheat oven to 350 degrees
  • 4. Mix soup with water and Worcestershire Sauce; pour over the meatballs; The liquid should pretty well cover the meatballs, so add more water, if necessary.
  • 5. Cover tightly with aluminum foil; bake for 1-1/2 hours, gently stirring 2 times during baking, making sure to tightly seal after each turn. If the meatballs are well covered, I skip stirring or turning them.
  • 6. If you want a thicker sauce, when meatballs are done, remove foil cover and leave in oven about 10 more minutes.

BAKED TERIYAKI TURKEY MEATBALLS

Categories     Beef

Number Of Ingredients 19

Meatballs
1 1/4 lb. ground turkey
2 cloves garlic, minced
2 teaspoons grated ginger
1/4 cup chopped Italian parsley
1/2 teaspoon ground allspice
1 egg, lightly beaten
1/4 cup plus 2 tablespoons panko breadcrumbs
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Sauce
1/3 cup rice vinegar
1/4 cup brown sugar
1/3 cup water
1/4 cup soy sauce
1/4 cup canola oil
1 tablespoon all-purpose flour
2 teaspoons grated ginger
2 cloves garlic, minced

Steps:

  • Preheat oven to 350 F. Line a rimmed baking sheet with aluminum foil (for easy clean-up) and spray with cooking spray. Add all of the ingredients for the meatballs to a large bowl and use your hands to combine until evenly distributed - try not to overmix. Using about 2 tablespoons of the mixture (I just eyeballed it), form the meatballs by rolling the mixture into a ball in your hands. Arrange the meatballs on the prepared baking sheet. Bake for 15-20 minutes, or until browned and cooked through. To make the sauce: Whisk together all of the sauce ingredients in a small pan and place over medium heat. Bring to a simmer and cook until the sauce thickens slightly, about 10 minutes. When the meatballs have finished cooking, remove them from the oven and brush liberally with the sauce then return to the oven for 5 minutes. Serve with remaining sauce.

BAKED TURKEY & SPINACH MEATBALLS

Baked Turkey & Spinach Meatballs image

Categories     turkey     Dinner     Bake     Low Fat

Number Of Ingredients 11

1 pound Ground Turkey
1/4 cup Grated Parmesan Cheese
1/3 cup Italian Seasoned Breadcrumbs
1 package Defrosted Cut Spniach
3 pinches Salt
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/2 teaspoon Oregano
3 pinches Black Pepper
1 head Egg
1/4 cup Olive Oil

Steps:

  • Preheat oven to 375 degrees. Place all ingredients in a large bowl.
  • Mix ingredients with a fork until the turkey mixture is well mixed.
  • Place aluminum foil over a baking sheet. Lather olive oil on the foil.
  • Create meatballs, about an 1/8 cup each, to make 30 meatballs, and place on foil.
  • Brush olive oil on top of the meatball. Place tray in oven about 20 -23 minutes.
  • Let rest about 5 minutes before taking meatball off the foil.

Tips:

  • Use a combination of ground turkey and ground chicken or pork for a more flavorful meatball.
  • Add some grated vegetables, such as carrots, zucchini, or onion, to the meatball mixture for added nutrition.
  • Use a light touch when mixing the meatball mixture; over-mixing can make the meatballs tough.
  • Form the meatballs into uniform sizes so that they cook evenly.
  • Bake the meatballs in a preheated oven at 400°F for 20-25 minutes, or until they are cooked through.
  • Serve the meatballs with your favorite sauce, such as tomato sauce, gravy, or barbecue sauce.

Conclusion:

Baked turkey meatballs are a delicious and versatile dish that can be enjoyed as an appetizer, main course, or snack. They are easy to make and can be tailored to your own taste preferences. Whether you like them plain or saucy, baked turkey meatballs are a great way to enjoy this lean protein.
