Steps:
- Peel potatoes only if the skin is tough, otherwise, just scrub and rinse them.
- Cut potatoes vertically, into thin slices, but not all the way through. Lay a spoon next to the potato to prevent knife from cutting all the way through. (A wooden spoon works great.).
- Put potatoes in a baking dish. Fan them slightly.
- Sprinkle with salt, and drizzle with the melted butter. Sprinkle with herbs.
- Bake potatoes at 425 degrees for about 50 minutes.
- Remove from oven. Sprinkle with cheeses.
- Bake potatoes for another 10-15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. Check for doneness with a fork.
- To microwave: Prepare potatoes as above, and place in a microwave safe dish or pan.
- Sprinkle with melted butter and herbs.
- Microwave on High power for 10 minutes, rearranging the potatoes after 5 minutes if your microwave does not have an automatic turn table.
- Let rest for 5 minutes.
- Sprinkle with grated cheese and Parmesan cheese.
- Microwave for another 4-6 minutes on High power until cheeses are melted, and potatoes are soft.
- Sprinkle with salt, and serve.
- Note: You may substitute 2-3 teaspoons dried herbs of your choice for the fresh, if you prefer.
- After the potatoes are done, a little sour cream on top, sprinkled with bacon bits might be good.

Crunchy and tender, goes great with steak. Our boys like to eat them with their fingers dipped in ketchup (The potatoes dipped in ketchup-not their fingers!)

- Sprinkle with garlic, salt and thyme.
- Bake 400 degrees 25 to 30 minutes or until potatoes are done and browned at the edges.
- Serve immediately.
Tips:
- Choose the right potatoes: Look for firm, unblemished potatoes with smooth skin. Avoid potatoes that are green or have sprouts, as these can be bitter and toxic.
- Slice the potatoes evenly: This will help them cook evenly. Use a sharp knife or a mandoline to get uniform slices.
- Season the potatoes well: Don't be afraid to add plenty of salt, pepper, and other seasonings to the potatoes before baking. This will help them develop flavor.
- Use a hot oven: The higher the oven temperature, the crispier the potatoes will be. Aim for an oven temperature of at least 400°F (200°C).
- Don't overcrowd the baking sheet: Give the potatoes plenty of space to spread out so that they can cook evenly. If you overcrowd the baking sheet, the potatoes will steam instead of roast.
- Flip the potatoes halfway through cooking: This will help them brown evenly on both sides.
- Serve the potatoes hot: Baked potatoes are best served hot out of the oven. They can be garnished with a variety of toppings, such as butter, sour cream, cheese, or chives.
