Although not a huge fan of cooking, this is one recipe she made very well and it is always one that makes me remember her fondly. Serve chilled and top with whipped cream.

PERSIMMON PUDDING

Persimmon Pudding image

Wild persimmons start to blush along the country roads of Indiana in late September, stealing the colors of sunset and weighing down their trees like Christmas balls. They are native to the landscape, unlike the Chinese and Japanese varieties cultivated in California and found in grocery stores. Foraging carries on through November, when the fruit claims a place at the Hoosier Thanksgiving table in the form of a dark gold pudding, distant kin to the sweet persimmon bread offered to early colonials by the Cherokee. This recipe comes from Alverta S. Hart of Mitchell, Ind. This fall, the town hosted its annual Persimmon Festival and as always, the most suspenseful event was the persimmon pudding contest. Ms. Hart submitted her first pudding in 1962 as an 18-year-old bride, and re-entered every year for nearly four decades until she became a judge, then chairwoman of the event, winning on and off and collecting every color of ribbon along the way.

Tips:

  • Choose ripe persimmons: Look for fruits that are deep orange in color and slightly soft to the touch.
  • Use a good quality cornmeal: Stone-ground cornmeal will give your pudding a more rustic flavor and texture.
  • Don't overmix the batter: Overmixing can make the pudding tough, so mix just until the ingredients are well combined.
  • Bake the pudding in a water bath: This will help to prevent the pudding from drying out and cracking.
  • Let the pudding cool completely before serving: This will allow the flavors to meld and the pudding to set.

Conclusion:

Baked persimmon Indian pudding is a delicious and unique dessert that is perfect for fall. The persimmons give the pudding a sweet and légèrement spicy flavor, while the cornmeal adds a rustic texture. This pudding is easy to make and can be served either warm or cold. It is a great way to use up ripe persimmons and is sure to be a hit with your family and friends.
