Steps:
- Preheat the oven to 300 degrees F, line 2 baking sheets with parchment paper and line a third baking sheet or pan with paper towels. Brush each parchment-lined baking sheet with about 1 tablespoon of vegetable oil. Place the mushroom slices in a single layer, very close together, on the parchment and brush lightly with the remaining vegetable oil.
- Bake the mushrooms until slightly softened and brown, 25 to 30 minutes, then flip the mushrooms over, rotate the pans in the oven and bake until the mushrooms are well-browned and the edges are crispy, another 30 to 35 minutes. Remove from the oven and transfer to the paper-towel lined baking sheet to dry for a few minutes. (Leave the oven on.)
- In a large bowl, whisk together the molasses, soy sauce, brown sugar, garlic powder and paprika. Carefully toss the baked mushrooms in the marinade until evenly coated. Place half the marinated mushroom strips in a single layer (it's ok of they overlap) into a large metal steamer basket or colander that fits snugly into a large, heavy metal pot.
- Prepare a stovetop smoker: Line the bottom of a large, heavy metal pot with foil. Place two large handfuls of applewood chips in the bottom of the pot. Place the pot over medium heat and use a lighter to light a few of the wood chips. Once the chips are smoking, place the mushroom-filled steamer basket or colander inside the pot, then place a tight-fitting lid on top. Allow the mushrooms to smoke for 5 to 10 minutes, depending on how strong of a smoky flavor you want. Repeat with the second batch.
- After the mushrooms are smoked, return them to the baking sheets in a single layer. Sprinkle with salt and a few grinds of pepper and return to the oven until crisp, 3 to 5 minutes. Refrigerate in an airtight container for up to 5 days. Reheat in a low oven before serving.

OVEN-ROASTED MUSSELS WITH FRESH SPINACH
Mussels don't have to be steamed. They will pop open in a hot, dry cast iron skillet on a grill or in the oven. In this dish they are first tossed with garlic, olive oil and wine, then roasted along with the marinade in a pan in a hot oven. You may have to do this in batches, depending on the size of your skillet or baking dish. I like to use cast iron or enameled cast iron. This particular recipe is inspired by one in "The Mozza Cookbook," by Nancy Silverton. Served over a generous bed of steamed spinach, this is a beautiful dish. If you have leftovers, remove the mussels from the shells, chop the spinach and toss with pasta.

Steps:
- Preheat the oven to 400 degrees. Clean the mussels. Inspect each one carefully and discard any that have opened (if some are partly open, tap them with your finger, and if they close back up they are O.K.) or have cracked shells. Place in a large bowl, fill the bowl with cold water and rinse several times, swishing the mussels around in the water, pouring out the water and refilling. Clean the shells, if necessary, with a brush or the end of one of the mussels, and pull out the beards -- the hairy attachments emerging from the shells. Do not do this until just before cooking, or the mussels will die and spoil.
- Combine all of the ingredients in a large bowl and toss with the mussels. Refrigerate for 10 minutes.
- Arrange the mussels, pointed ends up, in a single layer in a cast iron skillet and/or a heavy baking dish. Spoon the marinade left in the bowl over the mussels and place in the preheated oven. Bake for about 10 minutes, until most of the mussels have opened.
- Meanwhile, steam the spinach in a large pot above 1 inch of boiling water until tender, about 5 minutes. Remove from the heat, arrange on a large round platter, and season with a little bit of coarse sea salt and pepper.
- Arrange the mussels that have opened on top of the spinach and return the pan to the oven for another 5 minutes. Remove from the heat and discard any mussels that have not opened. Arrange all of the mussels on top of the spinach, pour the juices in the pan over the mussels and spinach, sprinkle on the parsley and serve over a bed of steamed spinach, with crusty bread.

Tips:
- Prep the Mussels: Before starting, ensure the mussels are clean and free of any barnacles or debris. Use a stiff brush to scrub them thoroughly, removing any dirt or grit. Discard any mussels that are open or cracked.
- Choose Fresh Ingredients: The freshness of your ingredients greatly impacts the dish's overall flavor. Opt for plump, closed mussels, meaty bacon, and fresh mushrooms for the best results.
- Don't Overcook the Mussels: Mussels cook quickly, so keep an eye on them during baking. Overcooked mussels become tough and rubbery. They're done when they open up, which usually takes around 5-7 minutes.
- Experiment with Herbs and Spices: Feel free to adjust the herbs and spices in the recipe to suit your taste preferences. Add a pinch of chili flakes for a hint of heat or incorporate fresh herbs like parsley or thyme for extra flavor.
- Serve Immediately: Baked mussels are best enjoyed hot out of the oven. Serve them immediately with crusty bread or crackers for dipping in the delicious sauce.
Conclusion:
These succulent baked mussels with mushrooms and bacon are a delightful seafood treat that combines the briny sweetness of mussels with the savory flavors of bacon, mushrooms, and herbs. The addition of white wine and cream creates a rich and flavorful sauce that complements the tender mussels perfectly. Whether served as an appetizer or a main course, this dish is sure to impress your family and friends. So, gather your ingredients, preheat your oven, and embark on a culinary journey that will leave your taste buds tantalized. Happy cooking!
