The taste and texture of this dish is subtle and unusual but my BF and I think it's absolutely delicious. My apologies if you haven't found this as appealing as we do. The recipe comes from a fantastic cookbook of the midwestern region (of the U.S.) called "Hollyhocks and Radishes." The original ingredients call for 2 cups cream instead of milk and twice the butter, so if you don't mind the extra fat, go ahead. I also like to add more horseradish, at least 1 tablespoon. In my area hominy can be found in the mexican foods section of the supermarket.

4 tablespoons flour
2 cups low-fat milk
2 teaspoons prepared horseradish

8 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
One 30-ounce can hominy, drained and rinsed
3/4 cup half-and-half
Hot sauce, to taste
1/2 cup grated Cheddar
1/2 cup grated Monterey Jack cheese
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. 2 can(s) (15.5 oz. ea.) golden or white hominy
6 slice bacon, cooked and crumbled
1 large shallot, sliced
1 clove garlic, minced
4 Tbsp (1/2 stick) butter
1/2 tsp salt
1/4 tsp pepper
4 Tbsp all purpose flour
1 c half and half - or -
1 can(s) (12 oz.) evaporated milk
1 1/2 c shredded cheddar cheese, divided

Steps:

  • 1. Drain and rinse hominy; set aside.
  • 2. Cook bacon and crumble; set aside.
  • 3. Peel and slice shallots. Peel and mince garlic.
  • 4. In a medium saucepan melt butter over medium-high heat. Add the sliced shallots, minced garlic, salt and pepper and cook for 2 or 3 minutes, stirring frequently. Stir in the flour and blend well.
  • 5. Add the half-and-half or milk gradually, and stir constantly until mixture begins to thicken, about 5 minutes.
  • 6. Blend in 1 cup of the cheese and stir until melted.
  • 7. Add the hominy and mix thoroughly. Place the mixture into a lightly buttered 2-qt. baking dish. Bake, covered, in a preheated 350-degree oven for 30 minutes.

1 large onion
2 fresh jalapeno peppers, chopped and minced
1 teaspoon ground cumin

2 cups cubed cooked chicken
1 recipe hominy with red chilies

3 ounces Monterey Jack cheese, shredded or slivered

  • Grease an eight-quart oven-proof casserole. Preheat oven to 350 degrees.
  • Heat the oil or fat in a heavy four-quart saucepan. Add the onion and saute over medium-low heat until golden. Stir in the jalapeno peppers and the cumin and saute another few minutes. Stir in the tomatoes and cook five minutes longer. Add the chicken and bring to a simmer.
