Josh wanted to find just the right recipe to prepare, and this is the one he chose. The topping--sliced plum tomatoes plus bread crumbs mixed with herbs and vegetables--adds nice flavor and color. Time 1h

Yield 6

Number Of Ingredients 12

1 tablespoon butter
1 cup thinly sliced onion
2 (10 ounce) packages chopped frozen spinach, thawed and squeezed dry
¼ teaspoon freshly grated nutmeg
½ teaspoon salt
1 ½ pounds haddock fillets
1 (14.5 ounce) can diced Italian plum tomatoes, juices reserved
½ teaspoon dried thyme
¼ teaspoon dried tarragon
1 tablespoon butter
1 tablespoon minced onion
1 teaspoon cornstarch

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly butter a 2-quart casserole or baking dish large enough to hold haddock fillets in a single layer.
  • Melt 1 tablespoon of the butter in a skillet over medium heat and cook the onion slices, stirring occasionally, until soft, about 5 minutes. Stir in spinach and nutmeg and cook for about 3 minutes.

Tips:

  • Choose the freshest haddock you can find. Fresh haddock will have a mild, sweet flavor and a firm, flaky texture. Avoid haddock that is discolored or has a strong fishy smell.
  • Don't overcook the haddock. Haddock is a delicate fish that can easily become dry and tough if it is overcooked. Cook it just until it is opaque and flakes easily with a fork.
  • Use a variety of vegetables in your casserole. This will add flavor, color, and nutrients to the dish. Some good choices include broccoli, cauliflower, carrots, celery, and onions.
  • Don't be afraid to experiment with different seasonings. Haddock is a versatile fish that can be paired with a variety of flavors. Try using different herbs, spices, and sauces to create a unique and flavorful casserole.
  • Serve the casserole immediately after it is baked. This will ensure that the fish is hot and flaky and the vegetables are crisp-tender.

Conclusion:

Baked haddock casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover haddock. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying casserole that the whole family will enjoy.
