2 lb ground beef
1/2 lb sliced mushrooms
1 small onion, chopped
1 Tbsp chopped garlic
28 oz jar spaghetti sauce
1 tsp salt
1/2 tsp black pepper
8 oz uncooked elbow macaroni
1/2 c water
1 c 4 ounces shredded mozzarella cheese

Steps:

  • 1. Preheat oven to 350 degrees F. Coat a 2-1/2-quart casserole dish with cooking spray
  • 2. In a large skillet, brown ground beef, mushrooms, onion, and chopped garlic over medium-high heat 6 to 8 minutes, or until no pink remains in the beef, stirring frequently. Drain off excess liquid then add remaining ingredients except cheese; mix well.
  • 3. Place mixture in prepared casserole dish, cover, and bake 25 minutes. Remove from oven and top with mozzarella cheese. Return to oven and bake, uncovered, 15 to 20 minutes, or until heated through and cheese has melted.

This is a nice hearty meal with a simple homemade sauce and lots of cheese.

1 1/2 lb ground beef
3 can(s) tomato sauce 28 oz cans
1 can(s) tomato paste
1 Tbsp italian seasoning
1/2 Tbsp garlic powder
1/2 Tbsp onion powder
1 tsp garlic salt
2 Tbsp sugar
1 box large elbow macaroni (not large box actual large noodles) or other favorite pasta
3 c cheddar cheese, shredded
crushed plain potato chips (optional)

Steps:

  • 1. Brown and drain ground beef in a large sauce pan. Add beef back to pan and the rest of the sauce ingredients. Bring to boil then lower heat and simmer for at least one hour. While sauce is cooking bring a pot of water to boil and cook noodles al dente right before sauce is done. Drain noodles and add sauce to noodles until it's the consistency you want. I make mine pretty saucy since baking dries it out a bit.
  • 2. Assemble casserole. Layer of pasta. Then half your cheese. Then another layer of pasta. Then add the rest of your cheese. Sometimes I add crushed up potato chips to the top for a little crunch. Bake at 350 for about 40 minutes. I like my cheese nice and browned and bubbly.

DEE'S BAKED GOULASH

This is a modified version of what my dad used to prepare when I was growing up....he "fondly" tagged it "Slum Gullum"! He was a very good cook.

3 c elbow macaroni, cooked
2 lb ground chuck, cooked
1 can(s) diced tomatoes - 15 oz.
1 can(s) tomato sauce - 8 oz.
2 c fine shredded cheese of choice or blend
1 pkg lipton onion soup mix
1 Tbsp chili powder

Steps:

  • 1. Cook Macaroni to andante stage. Drain, and place in casserole dish. Prepare beef in saute pan, leaving chunky, bite sized portions, drain excess oils. Add chili powder and onion soup mix and blend well. Add tomatoes and tomato sauce. Poor mixture over macaroni, add 1 cup cheese and lightly mix into cooked macaroni. Top with remaining 1 cup cheese, bake at 350 for 30 minutes. Serve with side salad and Texas Toast.
