4 large unpeeled russet potatoes, cut into 1/4-inch strips
¼ cup olive oil
3 cloves garlic, minced
½ teaspoon ground dried thyme
¼ teaspoon seasoned salt
½ cup grated Parmesan cheese, divided
¼ cup chopped fresh parsley
¼ cup grated Parmesan cheese
¼ teaspoon seasoned salt

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.

2 Tbsp olive oil
1/4 - 1/2 tsp garlic powder
1/2 - 3/4 tsp sea salt

Steps:

  • Preheat the oven to 425 degrees, and get a baking sheet with rack ready (if no rack, just line with foil/parchment paper and drizzle with olive oil. Cut the potatoes into fries and place in a bowl of cold water to soak for a few minutes. Drain the water and dry the fries with paper towel. Once dry, toss the fries with the olive oil, garlic powder, salt and pepper. Lay on a baking sheet in a single layer, preferably one that has a cooking rack so the fries can have the air circulating all around them (and no need to flip.) Bake for 20-25 minutes depending on your oven and how crispy you like your fries. If using a baking sheet without a rack, halfway through the cooking time, flip the fries. 3 tablespoons vegetable oil
Salt and freshly cracked black pepper

1 tablespoon chopped fresh parsley
2 teaspoons chopped fresh chives
1 teaspoon fresh thyme leaves, chopped

Steps:

  • Preheat the oven to 475 degrees F.
  • Soak the potato wedges in a bowl of water for 10 minutes. Drain the potatoes and then fully pat them dry with paper towels or a lint-free dish cloth.

4 medium russet potatoes, unpeeled (about 1 3/4 pounds)
3 tablespoons olive oil
1 teaspoon olive oil
1 teaspoon kosher salt
2 garlic cloves, minced
3/4 large red jalapeno chile, seeded & membranes removed
1/4 cup chopped fresh cilantro
salt
1/4 cup plain Greek yogurt
1/4 cup mayonnaise
1 chipotle pepper, seeded and minced
1 teaspoon adobo sauce (from chipotle can)
2 teaspoons fresh lime juice

Steps:

  • Preheat oven to 425 degrees.
  • Cut potatoes lengthwise into slices that are 1/3-inch thick and then cut each slice into 1/3-inch thick strips. Dry the potatoes between two kitchen towels. (Make sure the fries are bone dry.) In a large bowl, combine the potatoes, 3 tablespoons olive oil and 1 teaspoon kosher salt. (Don't over oil or they will become soggy.).
  • Divide the potatoes between two baking sheets lined with parchment paper, spread into a single layer. Bake until the potatoes are golden brown, about 40 minutes, turning the potatoes every 10 minutes, and rotating the racks halfway through baking. Note: Mine took less than 40 minutes and turning, also, prevents sticking.
  • Heat 1 teaspoon olive in a small nonstick skillet set over medium heat. Add garlic and jalapenos and cook until fragrant, about 1 minutes. Take care not to burn the garlic.
  • Place the cooked potatoes in a large bowl and toss with garlic, peppers, and cilantro. Taste and season with additional salt, if necessary.
  • To make sauce: In a medium bowl, stir to combine yogurt, mayonnaise, chipotle pepper, adobo sauce and lime juice. Serve with fries.
