OVEN BAKED THAI STYLE FISH CAKES

Oven Baked Thai Style Fish Cakes image

I found this while looking for recipes to use all the fish we've been catching. It's similar to Russ's Crab Cakes he makes and just as good. We cooked ours in a little oil in a pan 9no oven) but have submitted the original recipe.

BAKED FISH CAKES

Number Of Ingredients 18

2 pounds salt cod/haddock
1 pound mashed potatoes (about the same volume as the fish)
1 Onion, finely diced
3 dill pickles, finely diced
1/2 tablespoon garlic powder
1 tablespoon parsley, dried
1/2 tablespoon thyme, dried
1/2 tablespoons ground black pepper
1 teaspoon paprika
2 celery stalks, finely diced
2 eggs, lightly beaten
3 cups Panko bread crumbs
1 tablespoon parsley, dried
1 tablespoon thyme, dried
1 teaspoon cayenne powder
2 eggs, lightly beaten
1/4 cup plain greek yogurt
1/4 cup water

Steps:

  • Rinse salt fish in a colander to remove most of the salt.
  • Bring water to boil in a large pot, add fish and reduce to a gentle boil for 30 minutes.
  • Drain fish, let cool and then shred.
  • In a large bowl and fish and next ten ingredients. Mix well.
  • In a shallow dish mix Panko bread crumbs, parsley, thyme and cayenne.
  • In a separate shallow dish mix eggs, yogurt and water.
  • Form fish mixture into patties and set aside.
  • Heat oven to 400F.
  • Line a baking sheet with parchment paper.
  • Individually dip each fish cake into batter, coating on both sides then dip into bread crumb mix ensuring that cake is completely covered.
  • Place on parchment paper.
  • Cook for 20 minutes then flip and cook for 15-20 minutes more.
  • Serve with tartar sauce or ketchup.

Tips:

  • Choose the right fish. Use a firm, flaky white fish such as cod, haddock, or tilapia. Avoid oily fish such as salmon or tuna, as they will make the fish cakes too greasy.
  • Use fresh, high-quality ingredients. The better the ingredients, the better the fish cakes will taste. Use fresh herbs, vegetables, and spices.
  • Don't overmix the fish mixture. Overmixing will make the fish cakes tough. Mix the ingredients just until they are combined.
  • Shape the fish cakes gently. Use your hands to gently shape the fish cakes into patties. Avoid pressing them too hard, as this will make them dense.
  • Cook the fish cakes over medium heat. Cooking the fish cakes over high heat will make them dry and overcooked. Cook them over medium heat until they are golden brown and cooked through.
  • Serve the fish cakes with your favorite dipping sauce. Tartar sauce, horseradish sauce, or lemon wedges are all great options.

Conclusion:

Baked fish cakes are a delicious and easy-to-make meal that can be enjoyed for breakfast, lunch, or dinner. They are a great way to use up leftover fish, and they can be customized to your liking. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying meal that the whole family will enjoy.
