Steps:
- Preheat oven to 400°F.
- Prepare mushrooms:
- Cook mushrooms and shallot in butter with salt and pepper in a large heavy skillet over moderately high heat, stirring, until mushrooms are tender and liquid they give off is evaporated, about 10 minutes. Remove from heat and stir in crème fraîche and tarragon.
- Assemble and bake:
- Fit 1 slice of ham into each of 12 lightly oiled muffin cups (ends will stick up and hang over edges of cups). Divide mushrooms among cups and crack 1 egg into each. Bake in middle of oven until whites are cooked but yolks are still runny, about 15 minutes. Season eggs with salt and pepper and remove (with ham) from muffin cups carefully, using 2 spoons or small spatulas.
BROCCOLI, HAM, AND MOZZARELLA BAKED WITH EGGS RECIPE - (4.2/5)

Steps:
- Heat oven to 375F/190C. Spray a 9"x 12" casserole dish with non-stick spray. (The dish can be slightly smaller too, especially if you use the smaller amounts of ingredients.) Bring a medium-sized pot of water to a boil and cook the broccoli just 2 minutes; then pour into a colander placed in the sink and let it drain well. Dice the ham while the broccoli drains. Layer broccoli, ham, Mozzarella, and green onions (if using) in casserole dish. Season with Spike Seasoning and fresh-ground black pepper and pour beaten egg over. Use a fork to "stir" the mixture just until all the ingredients are coated with egg. (It might look like there is not enough egg, but carry on!) Bake 35-45 minutes, or until all the mixture is set and the top is starting to lightly brown. (If you use the higher amount of eggs, it will take the longer baking time, but start to check after about 30 minutes.) Serve hot, with low-fat sour cream if desired. This can be kept in the fridge for at least a week and reheated in the microwave.
Tips:
- Choose fresh, high-quality ingredients: Use fresh eggs, flavorful ham, and ripe vegetables for the best results.
- Use a well-seasoned cast-iron skillet or baking dish: This will help to evenly cook the eggs and ham and prevent them from sticking.
- Don't overcrowd the skillet or baking dish: Give the eggs and ham enough space to cook properly.
- Cook the eggs and ham until they are just set: Overcooked eggs will be tough and rubbery, and the ham will be dry.
- Serve immediately: Baked eggs and ham are best served hot out of the oven.
Conclusion:
Baked eggs and ham is a quick, easy, and delicious breakfast or brunch dish that can be enjoyed by people of all ages. With just a few simple ingredients, you can create a hearty and satisfying meal that is perfect for any occasion.
