Steps:
- Preheat oven to 400 degrees F.
- Mix together the lemon juice, olive oil, and melted butter in a shallow bowl (do not add the garlic yet). Set aside.
- In another shallow bowl, mix the all-purpose flour, spices, salt and pepper. Set next to the lemon sauce.
- Pat the fish dry. Dip the fish in the lemon sauce then dip it in the flour mixture. Shake off excess flour. Reserve the lemon sauce for later.
- Heat 2 tbsp olive oil in a cast iron skillet (or an oven-safe pan) over medium-high heat (watch the oil to be sure it is shimmering but not smoking). Add the fish and sear on each side to give it some color, but do not fully cook (about 2 minutes on each side). Remove the skillet from heat.
- To the remaining lemon sauce, add the minced garlic and mix. Drizzle all over the fish fillets.
- Bake in the heated oven until the fish flakes easily with a fork (10 minutes should do it, but begin checking earlier). Remove from the heat and sprinkle chopped parsley. Serve immediately.

BAKED COD WITH OLIVES
The olive topping on our cod was inspired by tapenade; it includes olives, anchovies, capers, olive oil, and lemon juice. Use a ceramic or glass baking dish; an aluminum dish could react with the acidic lemon juice and discolor the fish.

Tips:
- Choose fresh, flaky cod fillets. Look for fillets that are firm to the touch and have a mild, sweet smell.
- Use a flavorful olive oil. Extra virgin olive oil is a good choice, as it has a fruity, peppery flavor that will complement the cod.
- Add plenty of lemon. Lemon juice and zest brighten up the flavor of the cod and help to keep it moist.
- Don't overcook the cod. Cod is a delicate fish that cooks quickly. Overcooked cod will be dry and tough.
- Serve the cod with a simple garnish. A sprinkle of fresh herbs, such as parsley or cilantro, is a nice touch.
Conclusion:
Baked cod with lemon and olive oil is a simple, yet delicious dish that is perfect for a weeknight meal. It is also a good choice for people who are new to cooking fish, as it is easy to prepare and doesn't require any special skills. If you are looking for a healthy and flavorful way to cook cod, this recipe is a great option.
