CRUNCHY PECORINO BAKED COD

Crunchy Pecorino Baked Cod image

I have never made better cod at home than with this recipe. It's quick, delicious, and loaded with flavor. Instead of Pecorino you can use Parmesan, though I like the flavor of Pecorino best.

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 12

Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
  • Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
  • Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don't worry if some crumbs get into the sauce!)
  • Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.

Categories     Fish     Bake     Dinner

Number Of Ingredients 8

1 tbl butter
24 Ritz crackers, crushed into coarse crumbs (about 1 cup)
2 tbl minced fresh parsley or dill or basil
3 tbl mayonnaise
2 small garlic cloves,1 tsp grated zest plus 1 tbl juice from 1 lemon
4 skinless cod fillets (about 2 lbs)
salt and pepper
lemon wedges for serving

Steps:

  • 1. Adjust oven rack to middle position and heat oven to 450 degrees. Greasse baking sheet with butter. Toss cracker crumbs and 1 tbl parsley (or dill or basil) together in medium bowl. Mix remaining 1 tbl herb, mayo, garlic, lemon zest, and lemon juice together in small bowl. 2. Pat fish dry with paper towels then season with salt and pepper. Place on buttered baking sheet, spacing pieces about 1/2 inch apart. Brush tops and sides of fish with mayonnaise mixture, then press cracker crumbs into mayonnaise. 3. Bake until crumbs are goldent brown and fish flakes apart with fork, about 15 minutes. Serve with lemon wedges.

Tips:

  • Use fresh, high-quality ingredients: Fresh cod, vibrant herbs, and zesty lemons will ensure the best flavor for your baked cod dish.
  • Season the cod generously: Don't be shy with the salt and pepper. Season the cod fillets liberally before baking to enhance their natural flavor.
  • Make sure the topping is evenly distributed: Before baking, press the crunchy lemon-herb topping firmly onto the cod fillets. This will ensure that every bite is packed with flavor.
  • Bake the cod until it is just cooked through: Overcooked cod can become dry and tough. Bake the fillets until they are opaque and flaky, but not overcooked.
  • Serve the cod immediately: Baked cod is best enjoyed hot out of the oven. Serve it with your favorite sides, such as roasted vegetables, mashed potatoes, or a simple green salad.

Conclusion:

This baked cod with crunchy lemon-herb topping is a delicious and easy-to-make seafood dish that is perfect for a weeknight meal or a special occasion.
