Time 30m

Number Of Ingredients 13

50 g Butter
175 g Chorizo (sliced)
2 Garlic Cloves (chopped)
50 g Plain Flour
600 ml Milk
200 g Extra Mature Cheddar (grated)
100 g Block Mozzarella (grated)
1 tsp Smoked Paprika
1/4 tsp Cayenne Pepper
1 tsp Dijon Mustard
250 g Macaroni
25 g Panko Breadcrumbs
2 tbsp Parmesan (grated)

Steps:

  • Preheat the oven to 180°C (160°Fan / Gas Mark 4/ 350F).
  • Bring a large pan of salted water to the boil. Cook the macaroni according to packet instructions. Drain and set aside.
  • Meanwhile in another large pan, melt the butter over a medium heat.
  • Add the chorizo and garlic and fry for a minute to release the chorizo oils.
  • Stir in the flour and cook for 2 minutes, stirring all the time.
  • Gradually add the milk, turn up the heat and whisk until the sauce thickens. It should coat the back of a wooden spoon. This usually takes a couple of minutes.

  • Add the cooked pasta to the cheese sauce, mix together, and spoon into an ovenproof dish.

Time 1h

Yield 4

Number Of Ingredients 11

2 cups elbow macaroni
1 cup milk
1 teaspoon cornstarch
4 ounces shredded cheddar cheese (about 1 cup)
4 ounces shredded pepper jack cheese (about 1 cup)
6 ounces Mexican chorizo
1/2 cup minced red onion
2 Tbsp flour
2 teaspoons lime juice
2 Tbsp breadcrumbs
1 Tbsp butter

Steps:

  • Mix the cornstarch with the 2 cheeses in a bowl: and set aside. The cornstarch will help prevent the cheese sauce from getting too stringy.
  • Heat the milk: Put the milk into a small saucepan and heat until steamy. Keep warm while you are preparing the recipe, do not let boil.
  • Cook the macaroni pasta: Put 2 quarts of water, salted with 1 Tbsp salt, into a large pot and heat to a boil. Once the water is at a full boil, add the macaroni to the pot. Return to a boil, and cook, uncovered, for about 2 minutes less than the macaroni package specifies, so that it is al dente, cooked, but still firm to the bite.
  • Drain macaroni, preheat oven: When the macaroni is cooked, but still a bit firm, drain it and set aside. Preheat oven to 375°.

BAKED CHEESE WITH CHORIZO

Categories     appetizer

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 6

Vegetable oil, for oiling the baking dish
6 ounces chorizo or spicy Italian sausage, casings removed
1/4 cup chopped onion
1 large garlic clove, minced
2 cups grated Oaxaca or mozzarella cheese
6 flour tortillas, warmed

Steps:

  • Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.
  • In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onion and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.
  • Put 1/2 of cheese in the baking dish and sprinkle with 1/2 of the chorizo mixture. Repeat with the remaining cheese and chorizo mixture. Bake until the cheese is bubbling, about 20 minutes. Serve with flour tortillas for soft tacos.

Tips:

- Use high-quality chorizo: The better the chorizo, the better the mac and cheese will taste. Look for a chorizo that is made with fresh, flavorful pork and spices. - Cook the chorizo until it is slightly crispy: This will help to render out the fat and give the chorizo a nice, smoky flavor. - Use a good quality cheese: A sharp cheddar cheese is a classic choice for mac and cheese, but you can also use other types of cheese, such as Monterey Jack, Gouda, or Gruyère. - Don't overcook the macaroni: The macaroni should be cooked al dente, so that it still has a little bit of a bite to it. - Use a combination of milk and cream: This will help to create a creamy, rich sauce. - Season the mac and cheese to taste: Add salt, pepper, and other spices to taste. - Top the mac and cheese with breadcrumbs or panko crumbs: This will give the mac and cheese a nice, crispy topping.

Conclusion:

Baked chorizo cheesy mac is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great dish to serve at parties or potlucks. With its creamy, cheesy sauce and flavorful chorizo, this mac and cheese is sure to be a hit with everyone who tries it.
