BAKED CHEESE FIESTA DIP

This is a great tasting dip or spread. Serve it with chips or crackers. After it's cooked you can spread a very thin layer of sour cream on top, just enough to help adhere your choice of toppings, such as diced peppers, tomatoes, cilantro, green onion, etc. To make a nice presentation on your Christmas buffet, cut stars out of red and green peppers and spread over the top.

DELICIOUS BAKED MEXICAN SPINACH FIESTA DIP

Delicious Baked Mexican Spinach Fiesta Dip image

We love this warm, creamy, cheesy dip year round. Always the first to go at our football parties. You can adjust the level of heat by adjusting the amount of jalapeno you use. We're fine at 2 tablespoons. But, if you're daring and like it devilishly hot, you may go up to 4 tablespoons, but have some Margaritas ready!

Tips:

  • Use a good quality cheese. This is the main ingredient in the dip, so it's important to use a cheese that you enjoy the taste of. A sharp cheddar or a creamy Monterey Jack are both good options.
  • Don't overcook the dip. The cheese should be melted and bubbly, but it shouldn't be browned.
  • Serve the dip immediately. This is when it's at its best. You can store leftovers in the refrigerator for up to 3 days, but the dip will be best if you reheat it before serving.
  • Get creative with your toppings. The possibilities are endless! Some popular options include diced tomatoes, chopped green onions, crumbled bacon, and sliced jalapeños.
