BAKED BARLEY RISOTTO WITH MUSHROOMS AND CARROTS
Wholesome and nutty, barley is a superb alternative to arborio rice in this risotto, since it's naturally plump and chewy when cooked. The grated Parmesan and butter stirred in at the end release the barley's starches, creating a silky, creamy texture. Make sure to use pearl barley, not hulled, since it cooks much faster and is more tender. As for the mushrooms, white button, cremini and earthy shiitakes are a tasty, accessible mix, though any combination of oyster, king trumpet and maitake would raise the bar. Still, the best thing about this risotto, which is a satisfying vegetarian weeknight dinner (or side to any large roast or fish) is that it's baked, taking away the pressure of constant stirring at the stove.

BAKED FARMER SAUSAGE, POTATOES, AND CARROTS WITH GRAVY
This used to be the traditional Mennonite Sunday lunch at our house -- it has since become more likely at supper, but it's just as traditional and just as delicious! I'm not sure where farmer sausage is all available or whether it's one of those local specialties just available in Manitoba, so I've posted a recipe for that as well for those of you who make your own sausages. (#184513) If you can't buy it nearby or make it yourself, I'm terribly sorry -- you're definitely missing out! This recipe is for those of you who can.

Steps:
- If desired, peel frozen farmer sausage. (The best way is to hold it under a trickle of warm water.) Break sausage into 4-6 chunks.
- Place potatoes and carrots into a roaster or large casserole dish. Add water to cover the bottom of the dish.
- Place frozen sausage chunks over top (so drippings will flavour the vegetables), cover, and bake at 375F for 1-1/2 hours.
- Remove from oven and drain juices from casserole dish into a saucepan. (You may want to put the sausage and vegetables in a serving dish now and keep warm in the oven.).
- For gravy: Mix flour and milk together, adding milk gradually so a paste forms and slowly gets thicker -- you don't want lumps! (Actually, a Tupperware gravy shaker works best for this. You can just throw it all together and shake it up without worrying about lumps at all.).
- Add milk mixture to drippings and bring to a boil, stirring constantly, until gravy is thickened. (Depending on how much water content your sausage had, you may need to add a little more flour or milk to achieve the desired thickness.).
- Add salt and pepper to taste and serve.

OVEN-BAKED TENDER CARROTS
I came up with this recipe so that I could make carrots with roast. I cook my roast in the crock pot, but don't like to cook my veggies with it, as they soak up all of the juice and end up with a terrible flavor. So I kind of came up with my own recipe, and it works great. Now I use this recipe any time I want to have carrots as a side dish with dinner. It goes well with lots of meat dishes, and it's easy to make. If you don't want to mess with peeling and chopping carrots, use baby carrots. I use the same recipe with potatoes, but they don't need to cook as long. If you are making this with roast or any other meat that has made its own broth, you can use that instead of beef broth from the can. I always eyeball this recipe so the measurements are approximations.

Steps:
- Place carrots in oven-safe baking dish with lid.
- Pour in some beef broth (I tend to eyeball it, but the more carrots, the more broth you want--anywhere from 1/2 c to 1 c).
- Add salt, pepper, garlic any seasonings you wish and stir to coat carrots in seasonings and broth.
- Add the butter on top.
- Cover, and cook at 400 degrees for 45 min-1 hour, depending on how many carrots you are making. When they are done, the carrots will be soft and tender enough to poke a fork through easily.
- Follow the same recipe for potatoes, but allow less cooking time.

Steps:
- Grease the bottom and sides of a covered casserole dish with 1 tablespoon of butter and set aside.
- Melt the other tablespoon of butter in a skillet and slowly cook the onions, stirring occasionally, until golden brown and tender.
- Preheat oven to 180C/350°F.
- While the onions cook, peel and THINLY slice the carrots and put them into the buttered casserole dish. The slices should be about the thickness of a nickel (or a pound coin in the UK). If they are too thick, they will take longer than noted to cook.
- When the onions are cooked, add them to the carrots and mix them around a bit.
- In a small bowl, combine the orange juice, honey, paprika, garlic powder, dill, cayenne (if using), melted butter, salt and pepper.
- Pour this mixture over the carrots, cover and bake for one hour. Remove from oven and test to see that carrots are firm but tender. If need be, return to oven and cook an additional 5-15 minutes.
- Enjoy now because I can almost guarantee that you won't have any leftovers!

Nutrition Facts :
Tips:
- Choose the right carrots: Look for carrots that are firm, smooth, and brightly colored. Avoid carrots that are limp, wrinkled, or have blemishes.
- Peel the carrots if desired: Peeling the carrots is not necessary, but it will give them a more refined look. If you do peel the carrots, be sure to use a sharp peeler to avoid wasting any of the carrot.
- Cut the carrots into uniform pieces: This will help them cook evenly. The size and shape of the carrot pieces is up to you, but try to cut them into pieces that are about the same size so that they cook evenly.
- Toss the carrots with oil and seasonings: This will help them to brown and caramelize in the oven. You can use any type of oil you like, but olive oil or avocado oil are good choices. As for seasonings, you can use salt, pepper, garlic powder, onion powder, or any other herbs or spices that you like.
- Roast the carrots until they are tender and slightly browned: The roasting time will vary depending on the size and thickness of the carrot pieces. Start checking them after about 20 minutes and continue roasting until they are tender when pierced with a fork.
Conclusion:
Baked carrots are a simple but delicious side dish that can be enjoyed with a variety of meals. They are a good source of vitamins, minerals, and fiber, and they can be roasted in the oven in just a few minutes. With their sweet and slightly caramelized flavor, baked carrots are a surefire hit with everyone at the table.
