KRAUTFLECKERL - CABBAGE PASTA BAKE

Krautfleckerl - Cabbage Pasta Bake image

Vienna is one of my favorite cities in the world. I also love Austrian cooking like this one with a glass of chilled gruner veltliner. Using cabbage in dishes always make me happy because it's so nutritious and tasty. I am also posting a homemade fleckerl (egg noodle recipe) if you want to try making your own. Othwerwise, small square noodles or egg noodle work fine here.

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 9

5 ounces small square noodles (for fleckerl, can use wide egg noodles)
1/2 cabbage
3 1/2 tablespoons oil
1 onion, chopped
1 tablespoon sugar
1/2 teaspoon caraway seed
salt
pepper
1 -2 sausage, sliced thinly (any kind)

Steps:

  • Wash the cabbage and remove the stalk. Cut into quarters, then cut the quarters into smaller pieces. Add salt to taste.
  • Cut the cabbage pieces roughly into squares, bruise by hand and let stand for about 15 minutes.
  • Heat the oil in a skillet and caramelize the sugar a bit (this takes about 2-3 minutes on medium heat). Sugar will melt and turn brownish color. Do not burn.
  • Add the cabbage, onions and the caraway seeds. Cover, and cook for about 30 minutes on low, stirring regularly, until light brown in color. Season with pepper.
  • Brown the sausage slices for several minutes to brown lightly and remove.
  • Boil some water and cook the noodles until soft, drain and combine with the cabbage. Let stand for a few minutes. Season with more salt and pepper to taste. Top with browned sausage slices.

CORNED BEEF, CABBAGE AND PASTA BAKE

Corned Beef, Cabbage and Pasta Bake image

This is what I made up with my corned beef and cabbage leftovers. The amounts can vary, just use what you have leftover and add enough pasta to fill a 13x9 inch baking dish. Also, use any kind of corned beef: with or without cabbage, potatoes, onions, carrots etc. Really just use what you have. A scoop of sour cream would go nicely on top. Prep time does not include cooking pasta or corned beef.

Tips:

  • Choose the right type of cabbage: For this recipe, it's best to use a firm head of green or Savoy cabbage. Avoid using red cabbage, as it has a stronger flavor that may not pair well with the other ingredients.
  • Slice the cabbage thinly: This will help it cook evenly and quickly. You can use a sharp knife or a mandoline to slice the cabbage.
  • Use a large skillet or Dutch oven: This will give the cabbage and pasta plenty of room to cook without overcrowding.
  • Don't skimp on the seasonings: The combination of garlic, onion, thyme, and paprika adds a lot of flavor to this dish. Be sure to use fresh herbs and spices for the best results.
  • Cook the cabbage until it's tender: This will take about 10-12 minutes, depending on the thickness of the slices. You can check the cabbage by piercing it with a fork; it should be easily pierced when it's done.
  • Add the pasta and cook until it's al dente: This will take about 8-10 minutes, depending on the type of pasta you're using. Be sure to stir the pasta frequently so that it doesn't stick together.
  • Serve immediately: This dish is best served hot, so be sure to have everything ready before you start cooking.

Conclusion:

Baked cabbage and pasta is a simple, yet flavorful dish that's perfect for a weeknight meal. It's also a great way to get your kids to eat their vegetables. The combination of cabbage, pasta, and cheese is sure to please everyone at the table.
