BLINTZ BAKED FRENCH TOAST

Blintz Baked French Toast image

The perfect make-ahead brunch, this casserole has the flavors of a blintz in French toast form. Instead of the more traditional cottage cheese, creamy ricotta goes into the custard poured on top of the challah, and everything is baked until crisp on the outside and pillowy on the inside. 2 tablespoons sour cream
1/4 cup butter, melted (for best flavor, no substitutes)
3/4 teaspoon vanilla extract
1 1/3 cups all-purpose flour

MAKE-AHEAD BLINTZED BREAKFAST BAKE

Make-Ahead Blintzed Breakfast Bake image

French toast meets bread pudding and cheese blintz with whispers of Danish in this easy make-ahead breakfast bake. Serve for brunch with coffee.

Provided by Vivian Howard

Yield Serves 8

Number Of Ingredients 10

8 large eggs
2½ cups half-and-half
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1 teaspoon kosher salt
8 cups 1-inch cubed bread, such as ciabatta, sourdough, or baguette
8 ounces (1 package) cream cheese
1 cup Sweet Potential
¼ cup granulated sugar
2 teaspoons ground nutmeg

Steps:

  • In a medium bowl, whisk the eggs, half-and-half, vanilla, cinnamon, and salt into a homogeneous milky mix. Put half the bread in a 10-inch round or 8 x 12-inch rectangular baking dish and pour half the egg mixture over top. If you partially froze your cream cheese it will crumble easily, so crumble half the cream cheese on top of the bread mixture then top that with half the Sweet Potential. Finish with the remaining bread, egg mixture, cream cheese, and Sweet Potential. Cover with foil and refrigerate overnight, or up to 48 hours.
  • The following morning, preheat your oven to 350°F. Combine the sugar and nutmeg and sprinkle it over top of the bread. Refasten the foil, slide the whole thing onto the middle rack of your oven, and bake for 40 minutes. Remove the foil and bake an additional 20 minutes, until crisp and browned. Serve warm.

BLINTZ CASSEROLE

Blintz Casserole image

I came across this recipe from Beach Hut Bed & Breakfast Inn and posted it here so I could locate it next weekend. Thought it sounded good, not too sweet, and seems easy to put together for overnight guests. I don't know how many people this recipe would serve, but I would double it for 4 guests, thinking three blintzes per person. I will post a review next week. I did try this recipe and I thought it was very, very bland. Perhaps others will think differently.

INA GARTEN'S BAKED BLINTZES WITH FRESH BLUEBERRY SAUCE RECIPE - (4.2/5)

Ina Garten's Baked Blintzes with Fresh Blueberry Sauce Recipe - (4.2/5) image

Provided by Foodiewife

Number Of Ingredients 25

BLUEBERRY SAUCE:
3/4 cup freshly squeezed orange juice from about 3 oranges
2/3 cup sugar
1 tablespoon cornstarch
2 pounds fresh blueberries
1 teaspoon grated lemon zest
1 tablespoon freshly squeezed lemon juice
BATTER:
1 1/4 cups milk
2 tablespoons sour cream
4 tablespoons unsalted butter, melted
1 teaspoon pure vanilla extract
4 extra-large eggs
1 1/3 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
FILLING:
24 ounces or 3 cups ricotta cheese
8 ounces mascarpone cheese
2 extra-large eggs
1/3 cup sugar
1 tablespoon grated lemon zest from about 2 lemons
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon pure vanilla extract
1 teaspoon kosher salt

Steps:

  • For the Blueberry sauce: Combine the orange juice, sugar, and cornstarch in a medium saucepan and boil, stirring occasionally, until translucent and thickened. Stir in the blueberries and simmer 4 to 5 minutes. Stir in the zest and lemon juice and cool. Preheat the oven to 350°F. Grease a 9x13-inch baking pan. For the pancake batter: Place all the ingredients of the batter in the bowl of a food processor with a steel blade or blender (or a whisk, ) and blend until smooth. Pour half the batter into the dish and bake 10 minutes, or until set. For the filling: Whisk all the ingredients together in a large bowl until thoroughly combined. Spread over the baked layer Next, carefully spoon the remaining pancake batter over the cheese layer. Return to the oven and bake for 35 to 40 minutes or until the top is light golden and the filling is set. Remove from the oven and let stand 10 to 15 minutes. Cut into squares and serve with blueberry sauce. NOTE: This makes a lot! You can cut this recipe in half. The night before, I made the pancake batter, but waited to add the baking powder right before making this. I also made the filling and the blueberry sauce the night before. This assembled beautifully, and baked perfectly. Warm the blueberry sauce, but don't boil it.

Tips:

  • Prep the Blintzes in Advance: For a quicker assembly, prepare the blintzes ahead of time and store them in the refrigerator or freezer. You can make the blintz batter up to 2 days in advance and store it covered in the refrigerator. The blintzes can be made up to 1 day ahead and stored covered in the refrigerator or up to 1 month in the freezer.
  • Use a Variety of Fillings: Feel free to experiment with different fillings for your blintz casserole. Some popular options include sweetened cream cheese, cottage cheese, fruit preserves, and chopped nuts. You can also add a savory twist by using fillings like cooked vegetables, shredded chicken, or ground beef.
  • Don't Overcrowd the Pan: When cooking the blintzes, do not overcrowd the pan. Cook them in batches if necessary to prevent them from sticking together. To prevent sticking, use a non-stick pan or lightly grease the pan with butter or cooking spray.
  • Bake Until Golden Brown: Bake the blintz casserole until the top is golden brown and the center is set. This usually takes about 30-35 minutes. To check if the casserole is done, insert a toothpick into the center. If it comes out clean, the casserole is ready.
  • Serve Warm: Serve the blintz casserole warm with your favorite toppings. Some popular options include sour cream, fruit compote, or maple syrup.

Conclusion:

Baked blintz casserole is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is a great way to use up leftover blintzes and can be easily customized to your liking. With its creamy filling, crispy edges, and sweet or savory flavors, this casserole is sure to be a hit with everyone. So next time you are looking for a quick and easy meal, give baked blintz casserole a try. You won't be disappointed!
