Time 45m

Yield 6 servings

Number Of Ingredients 8

6 medium baking apples, such as Boskop, Braeburn, Fuji, or Gala
4 to 6 dried figs
1/4 cup chopped almonds, toasted
1 cup sugar
1/3 cup plus 2 tablespoons butter
1 tablespoon heavy cream or creme fraiche
Juice of 1 lemon
Serving suggestion: cinnamon whipped cream or creme fraiche

Steps:

  • Preheat the oven to 350 degrees F.
  • Core the apples. Using a paring knife, score a ring around the midriff of each apple, just cutting through the skin to prevent the apples from bursting during baking. Stuff the apples with the figs and almonds. Set on a baking sheet, and bake until puffed up and soft all the way through, about 30 minutes.
  • Meanwhile, put the sugar in a saucepan with a spoonful of water, and boil to a golden caramel, about 5 minutes, depending on how much water you've added. Do not stir the sugar with a spoon, gently swirl the saucepan over the heat until the desired color. You want a nice rich caramel color, but don't let it get too dark.
  • Serve the baked apples warm from the oven with the sauce poured over and with a generous slump of cinnamon whipped cream or creme fraiche on the side.

Time 1h10m

Yield 4 servings

Number Of Ingredients 11

4 teaspoons unsalted butter, more for pan
4 tart baking apples, like Winesap or Empire
1/3 cup plus 4 teaspoons maple syrup
4 teaspoons brown sugar
4 teaspoons chopped pecans
4 teaspoons chopped golden raisins
1/4 cup dry white wine or water
3 cardamom pods
2 whole cloves
1 1/4-inch-thick slice fresh ginger root
1 2-inch piece cinnamon stick

Steps:

  • Heat oven to 375 degrees. Butter a small cake or baking pan. Use a vegetable peeler to peel a strip of skin from around stem of each apple. Use a melon baller or grapefruit spoon to scoop out core of each apple, leaving at least 1/4 inch at base. Stand apples in pan and use a paring knife to make 6 vertical cuts surrounding cavity, being sure not to pierce through bottom of apple.
  • Place 1 teaspoon butter and 1 teaspoon maple syrup into cavity of each apple. Mix together brown sugar, pecans and raisins, and stuff 1/4 of this mixture into each apple. Pour remaining maple syrup and the wine into bottom of pan, and add cardamom, cloves, ginger and cinnamon.
  • Bake apples, basting with liquid in pan every 5 to 7 minutes, until tender yet not collapsed, 45 minutes to an hour. Serve warm or at room temperature, with custard if desired.

CARAMELIZED BAKED APPLES

Categories     dessert

Time 45m

Yield 10 servings

Number Of Ingredients 7

10 medium-large firm apples, such as Cortland, Rome or Ida Red
Zest of 1 small lemon, grated
1 1/2 cups fresh apple cider
1 tablespoon vegetable oil
2 cups sugar
1 1/2 cups heavy cream
3 tablespoons crystalized ginger, cut into fine dice

Steps:

  • Preheat the oven to 375 degrees.
  • Wash and core to a half-inch of the bottoms of each apple. With a vegetable peeler, peel the tops and bottoms of each apple, leaving a band of skin approximately two inches wide. Place the apples one to two inches apart in a large baking dish. Sprinkle a little of the zest into the well of each apple. Add the cider to the dish and bake for 25 to 30 minutes or until tender but not mushy. Place the apples on a lightly oiled baking pan and allow to cool thoroughly.
  • When the apples have cooled, place one cup of sugar and a half cup cold water in a medium-size heavy saucepan over medium-high heat. Stir with a wooden spoon until the sugar has dissolved. When the sugar begins to turn golden, rotate the pan to even the color. When the caramel is light amber, using a wooden spoon, carefully coat each apple with the hot caramel. (Caramel burns quickly and must be watched carefully. It will continue to cook and become a darker amber as you are working with it.) Repeat the method with the remaining sugar, using a clean, cool, medium-size heavy saucepan.
  • Meanwhile, whip the cream into soft peaks and fold in the ginger and refrigerate until ready to serve the apples.
  • When ready to serve, pry the apples from the baking pans with a metal spatula and arrange them on a serving platter or serve on individual dessert plates, accompanied with the ginger cream.

Tips:

  • Choose firm, tart apples that will hold their shape when baked, such as Granny Smith, Honeycrisp, or Braeburn.
  • Peel and core the apples, but leave the stems intact. This will help the apples hold their shape and make them easier to eat.
  • Use a sharp knife to score the apples in a criss-cross pattern. This will help the caramel sauce penetrate the apples and create a delicious glaze.
  • Make sure the caramel sauce is thick and creamy before pouring it over the apples. If the sauce is too thin, it will not coat the apples properly.
  • Bake the apples until they are tender, but still hold their shape. Overcooked apples will become mushy and lose their flavor.
  • Serve the baked apples warm or at room temperature. They can be topped with whipped cream, ice cream, or a sprinkle of cinnamon.

Conclusion:

Baked apples in caramel cream are a delicious and easy-to-make dessert that is perfect for any occasion. They are a great way to use up leftover apples, and they can be made ahead of time and reheated when you are ready to serve. Whether you serve them warm or at room temperature, these apples are sure to be a hit with your family and friends.
