- Add flour, salt, grated coconut, raisins, cherries, nutmeg and mix well.
- Stir in almond extract, evaporated milk, and water, until a firm dough is formed. (You may need to add additional water.).

- Bake for about 1 hour, until a skewer inserted into the center of the loaves comes out clean (Or a digital thermometer reads 190*F.) Cool completely in the pans before removing.

Steps:
- Using an icepick, pierce the three soft spots on the coconut. Drain the liquid and store in the refrigerator. Break the coconut into chunks and grate the flesh into a small bowl. You need at least 1 cup; more is even better.
- Heat the oven to 325 degrees. Grease a 9-by-5-inch loaf pan.
- In a small bowl, stir together the flour, baking powder, salt and coconut flakes.
- In a large bowl of an electric mixer, cream 1/2 cup of the sugar with the butter until light and fluffy. Beat in the eggs, then the vanilla.
- Measure out 1/4 cup of the coconut milk and combine it with the milk. Add the liquids to the egg mixture, alternating with the dry ingredients and stirring just until all the ingredients are blended. Spread into the prepared pan.
- Sprinkle the teaspoon of sugar over the dough and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool on a rack before slicing.

SWEET BREAD (BARBADOS)
This recipe is from week 23 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and Barbados is my 23rd stop. I served this as a dessert, but Bajans usually have it as a snack with a cup of hot tea.

Tips:
- Use fresh yeast for the best results. If using active dry yeast, proof it in warm water with a little sugar before adding it to the dough.
- The dough should be sticky, but not too wet. If it's too wet, add a little more flour. If it's too dry, add a little more liquid.
- Knead the dough until it is smooth and elastic, about 10 minutes. This will help to develop the gluten in the flour and make the bread light and airy.
- Let the dough rise in a warm place until it has doubled in size, about 1 hour. This will give the yeast time to ferment and produce carbon dioxide, which will create the air pockets in the bread.
- Bake the bread in a preheated oven at 375 degrees Fahrenheit for 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped.
- Let the bread cool completely before slicing and serving.
Conclusion:
Bajan sweet bread is a delicious and easy-to-make bread that is perfect for any occasion. It is slightly sweet and has a soft and fluffy texture. This bread is also very versatile and can be served with a variety of toppings, such as butter, jam, or fruit. If you are looking for a new bread recipe to try, I highly recommend Bajan sweet bread.
