Bacon wrapped potatoes are easy potato appetizers that don't take long to prepare, and crowds love them. Best served with a dip of your choice or as a side!

9-10 baby potatoes (1 pound/450 grams), see note 1
¾ teaspoons salt
1 tablespoon olive oil
1.5 tablespoons fajita seasoning
20 bacon slices, see note 2

Steps:

  • Brush the potatoes clean under running water and cut each in quarters (lengthwise). Place them in a small saucepan and pour over just enough water to cover them. Add ¾ teaspoon of salt and cover with a lid. Bring to a boil. Reduce the heat to low and simmer covered for about 8 minutes (don't over-cook). Strain the water and transfer the potatoes in a mixing bowl. Place them in the fridge to cool, for about 10 minutes.
  • Preheat oven to 400 Fahrenheit (200 Celsius).
  • Pour olive oil over the cooled potatoes and toss. Add fajita seasoning and toss well.
  • Cut all bacon slices in half, crosswise. Wrap each half around a potato wedge and secure with a toothpick. Place onto a baking tray lined with baking parchment (or aluminum foil). Repeat with the rest of the potatoes.
  • Bake in a preheated oven for about 15 minutes or until the bacon is cooked through and to your liking.
  • Serve with a dip of your choice!

2 large potatoes, cut into 4 to 6 wedges
8 slices bacon, or more as needed
8 toothpicks
2 cups canola oil, or as needed
2 tablespoons butter, melted
1 tablespoon honey, or to taste
1 tablespoon chopped green onion
½ teaspoon chopped fresh parsley
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Wrap each potato wedge with 1 slice bacon. Secure each end of the bacon slice with a toothpick.
  • Place potato wedges in a large saucepan. Pour in canola oil to to cover halfway. Cook over medium heat, turning occasionally, until potato wedges are tender, about 20 minutes. Increase heat to high; cook until bacon is crisp, 3 to 5 minutes more. Drain on a plate lined with paper towels.
  • Mix butter, honey, green onion, parsley, salt, and pepper together in a small bowl.

2 large idaho potatoes, cut lengthwise into 6 wedges each
12 slice bacon, uncooked
2 c canola oil
1 Tbsp honey
1 Tbsp fresh scallions, chopped
1/2 tsp fresh parsley, chopped
kosher salt to taste
fresh cracked pepper to taste
3 Tbsp butter, melted

Steps:

  • 1. Place oil in large sautee pan on medium heat. (Too high and bacon will burn and potatoes will be undercooked inside). If making vegetarian version, skip to next step. Wrap each potato wedge with one slice of bacon, from top of potato to bottom, secure open end with a toothpick.
  • 2. Place potato wedges in hot oil in saucepan. Oil should come halfway up side of potato. Over medium heat, cook potatoes until lightly browned and tender, turning occasionally, allowing bacon to cook on all sides as well. About 20 minutes. Remove when completely cooked and place on paper towel lined cookie sheet to remove excess oil. Then transfer to serving dish & carefully remove toothpicks.
  • 3. In a small bowl, mix the melted butter, scallions, honey, parsley, salt, & pepper together. Drizzle. HONEY-BUTTER, SCALLION mixture over potatoes and serve immediately. Either as a side dish or appetizer! Great for football parties or New Years Orderve!

Canola oil, for frying (about 2 cups)
8 slices applewood smoked bacon, cut in 1/2 vertically
16 toothpicks
1/4 cup softened butter
1/4 cup honey
1/2 teaspoon cracked black pepper
2 tablespoons chopped scallions
1 teaspoon chopped fresh parsley leaves

Steps:

  • 1. Cut each potato into 8 wedges and parboil until fork tender.
  • 2. In a preheated large saute pan, heat oil on medium-high heat. Wrap each potato wedge with 1 strip of bacon and secure with 1 toothpick on each end. Pan-fry in oil until bacon and potato are golden brown, approximately 8 to 10 minutes, turning frequently with tongs to brown all sides evenly. Remove and drain on paper towels.

1 small onion, thinly sliced
2 medium baking potatoes, halved lengthwise
4 bacon strips

Steps:

  • Layer onion slices on cut side of two potato halves; top with other potato half. Wrap each potato with two bacon strips. Secure with toothpicks. Place on a lightly greased baking pan. 2 large idaho potatoes
12 slice thin cut bacon
2 c canola oil
2 Tbsp melted butter
1 Tbsp honey
1 Tbsp chopped scallions, white and green parts
1/2 tsp chopped fresh parsley
sea salt and fresh cracked pepper to taste

Steps:

  • 1. Bake potatoes in microwave just until about half way done. Then cut each potato lengthwise into 6 wedges. Wrap each wedge with a slice of bacon and secure with a toothpick.
  • 2. Heat up the oil in a large saute pan (use enough oil so that it comes up to at least half way up the sides of the potatoes. Over medium heat cook the potatoe wedges until tender, turning occasionally (about 20 min.) then turn the heat up to high and cook until the bacon is crisp. (3-5 min). Transfer the potatoes to a papertowel lined plate to drain.
  • 3. In a small bowl, mix the melted butter, honey, scallions, parsley, salt and pepper to taste.
  • 4. Carefully remove the toothpicks from the potato wedges and transfer the potatoes to a platter, drizzle the scallion sauce over the top of the potatoes and serve.

Tips:

  • To save time, use pre-cooked bacon.
  • If you don't have bacon, you can substitute it with ham or sausage.
