2 ½ pounds Yukon Gold potatoes, cut into 1/4-inch slices (about 8 cups)
1 tablespoon extra-virgin olive oil
3 strips center-cut bacon (about 2 ounces), chopped
1 small onion, finely chopped (about 1 cup)
3 tablespoons all-purpose flour
½ teaspoon salt
¼ teaspoon white or black pepper
2 ½ cups low-fat milk
½ cup shredded extra-sharp Cheddar cheese, divided
¼ cup chopped fresh chives, divided

Steps:

  • Position racks in upper and lower third of oven; preheat to 425 degrees F.
  • Toss potatoes with oil in a large bowl until well coated. Divide between 2 large baking sheets and spread in an even layer. Roast, rotating the pans from top to bottom about halfway through, until tender and beginning to brown, 20 to 25 minutes.
  • Meanwhile, cook bacon in a large saucepan over medium heat, stirring frequently, until just crisp, about 3 minutes. Remove the bacon with a slotted spoon to a paper towel-lined plate. Add onion to the pan; cook, stirring frequently, until very soft and golden brown, 5 to 8 minutes. Add flour, salt and pepper; cook, stirring, for 1 minute more. Add milk; cook, stirring and scraping up any brown bits at the bottom of the pan. Increase heat to medium-high; cook, stirring, until the sauce thickens and bubbles, 3 to 5 minutes. Remove from heat.
  • When the potatoes are done, remove them from the oven. Preheat the broiler.
  • Transfer half the potatoes to a 2-quart broiler-safe baking dish. Spread half the sauce over the potatoes and top with 1/4 cup cheese and 2 tablespoons chives. Add the remaining potatoes, sauce and cheese. Top with the bacon. Broil, watching carefully, until the sauce is bubbling and the cheese is beginning to brown, 1 to 5 minutes depending on your broiler. Let stand 10 minutes. Serve topped with the remaining 2 tablespoons chives.

6 slices bacon
3 tablespoons sour cream

  • Pre heat oven to 350 degree. Add the frozen potato wedges to a baking sheet and put it in the oven for 15 minutes.
  • Remove the potatoes and cut them into bite sizes. Approximately 1 inches each.
  • Wrap 2 inches of bacon around 2 pieces of bite sized potatoes. Then use a tooth pick to hold them together.

2 large eggs (or use 2 extra large eggs, or use 3 medium eggs)
7 tablespoons melted butter, divided (no subs!)
1 pinch dried dill
1 pinch garlic powder (optional)
1 1/2 teaspoons salt
1/2 teaspoon black pepper
2 tablespoons grated parmesan cheese
4 tablespoons 18% table cream (you may have to use more cream if needed)
1/2 cup melted butter
1 -2 dash paprika (optional)

Steps:

  • Cook the potatoes in boiling water until fork-tender (about 25 minutes) drain and place in a large mixing bowl.
  • Cool the potatoes for about 20 minutes at room temperature.
  • Add in eggs and 7 tablespoons melted butter, pinch dill, pinch garlic powder, salt, pepper and parmesan cheese; add in 3 tablespoons cream adding in more to achieve desired consistency (you might use up to 7 tablespoons cream).

4 tablespoons unsalted butter
3/4 cup low-fat sour cream
2 egg yolks
1/2 cup fresh chives, chopped

  • Preheat oven to 400F degrees. Coat baking sheet with cooking spray.
  • In large pot, add potatoes and enough water to cover them. Bring to a boil. Reduce heat to medium, and cook 10 minutes, or until soft. Drain.
  • Mash until smooth (I like using my mixer to do this). Stir in butter and sour cream. Add egg yolks and chives. Season to taste with salt and pepper.

6 boneless chicken breasts (thawed)
6 slices bacon
salt
pepper
garlic powder
onion powder
paprika
1 cup water
1 medium onion, chopped to rings
cheddar cheese, sliced

Steps:

  • Preheat oven to 350.
  • Add water to a baking dish (I just use a cookie sheet).
  • Place onions in water.
  • Wrap each chicken breast with a slice of bacon. Make sure ends of bacon are faced downwards when placed on cookie sheet.
  • Once all chicken breasts are wrapped with bacon and placed on cookie sheet on top of onion slices, sprinkle the top of chicken with an even amount of each dry ingredient. Starting with salt, pepper, garlic powder, onion powder then paprika. Bake for 20 minutes.
  • By this time, if the water is evaporated add a little more. Flip over and sprinke the tops of chicken breasts with all dry ingredients again. Cook for an additional 20 minutes. By this time, again, water should be gone. Add cheese to the top of each piece of chicken and bake for an additional 5 minutes or until cheese has melted. Enjoy!
