16 large shrimp, peeled and deveined
8 slices bacon
barbeque seasoning, to taste

Steps:

  • Wrap shrimp with 1/2 slice of bacon, securing with a toothpick. Be sure and use the large shrimp--the cooking time for the shrimp and the bacon is similar. If you use medium-sized shrimp, you might want to precook the bacon a little--over cooked shrimp are tough and rubbery--and a real shame.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Line a jelly roll pan with extra heavy duty foil, and place baking rack in the pan. Place the shrimp on the rack, and sprinkle heavily with the barbecue seasoning. Turn and sprinkle second side. Set aside for 15 minutes. The bacon will turn from creamy white to a little opaque, and the seasonings will soak in.
  • Bake in the preheated oven until bacon is crisp and shrimp are tender, 10 to 15 minutes. The rack keeps the shrimp from sitting in the draining bacon fat. With a little luck, you won't tear the foil--you can throw that away and only have to scrub the rack.

You can cook it ahead of time and have an awesome BLT, or you want some really flavorful bacon bits added to your salad, or to those main dishes that have bacon in them. Well this is a great alternative answer. Also by BBQ the bacon, it drips alot of the grease that it normally bathes in while you pan fry. The prep time is so the bacon can marinate and get all nice and cozy with the BBQ sauce. Double or triple for large potluck meal batches. **NOTE** - Recently we started adding Rum to the mix, it comes out awesome. So if your inclined to do so, add a cup of good dark rum to the marinating bag.

1 lb bacon (from a butcher or meat counter)
1/2 cup barbecue sauce (Sweet Baby Rays, or Deb's Soulicious are our favorites)
1 medium onion (I prefer red, but sweet is also good)
1 cup dark rum (Optional, I like Sailor Jerry myself)

Steps:

  • Dice Onion up really nice.
  • Add diced Onion, Bacon, BBQ sauce and Rum (optional of course) to a ziploc freezer baggy (large enough to hold everything together).((I use a vacuum sealer for this)).
  • Pretend it is a gel sack and mix things up really well after you seal the bag.
  • Freeze combination for at least 6 hours, the freezing causes the ice crystals to cause mini-tears in the meat, allowing the Bacon to be extremely tender.
  • Take freezer pack out of freezer and allow to thaw normally (in the fridge).
  • Ready your BBQ, when hot, cook to doneness that you normally like your bacon (tender or crispy).
  • NOTE: Watch the flames, the dripping grease causes fires, and if you don't remain observant, you will end up with little charcoal sticks. :).

One 12-ounce package smoked bacon (12 strips)
One 14-ounce bag white corn tortilla chips
3 tablespoons barbeque seasoning
2 tablespoons sour cream
2 tablespoons barbeque sauce
1 teaspoon hot sauce
2 tablespoons all-purpose flour
One 12-ounce can evaporated milk (1 1/2 cups)
1/2 cup low-sodium chicken stock
1/2 teaspoon kosher salt
1 cup shredded mild Cheddar
One 15-ounce can baked beans, warmed
1/4 cup pickled jalapenos
2 tablespoons pimientos
2 scallions, chopped

Steps:

  • Place the bacon in a large nonstick skillet over medium-high heat until crispy and cooked through on both sides, about 16 minutes. Remove the bacon to a paper-towel lined plate, reserving the fat in the skillet. Once the bacon has cooled slightly, chop into bite-sized pieces. Set aside.
  • Place the chips on a large serving platter and sprinkle the barbeque seasoning over the top.
  • Combine the sour cream, barbeque sauce and hot sauce in a small bowl to make a barbeque crema. Set aside.

Remove from heat, as the sauce will continue to thicken.
  • Spoon the warm beans over the chips. Sprinkle half of the chopped bacon over the beans. Pour the warm cheese sauce generously over the platter. Sprinkle the jalapenos, pimientos, remaining bacon and scallions on top. Drizzle with the barbeque crema and serve immediately.

1 cup milk
1 cup uncooked quick oats
1 cup shredded Colby-Jack cheese
