1 (30 oz.) package frozen shredded hashbrowns, thawed
1/2 pound bacon, cooked crisp and crumbled
8 eggs
1/2 cup milk
1/2 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon pepper
Pinch of cayenne pepper
8 ounces shredded cheddar cheese
Chopped green onions for garnish, optional

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 9x13 inch baking dish.
  • Spread hashbrowns in an even layer in the bottom of the prepared pan.
  • In a large bowl, whisk together eggs, milk, salt, onion powder, garlic powder, pepper and cayenne. Pour over hashbrowns.

3/4 cup whole milk

  • Heat a 12" skillet on medium heat and cook bacon until crisp. Remove bacon and set aside, reserving drippings. Add potatoes to skillet and cook on medium high heat until crispy and browned. Over the years I have added bacon and increased the cheese, making it even better than the original. Multi-purpose dish, can be used as a main dish or side dish. Can also be served at breakfast, brunch, lunch, or even dinner.

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
8 large eggs
1 1/2 cups half-and-half
2 cups shredded monterey jack and cheddar cheese blend
1 lb bacon, cooked and crumbled

Steps:

  • Heat oven to 350°F Spray 11x7 glass baking dish with nonstick cooking spray. Add 1 bag Simply Potatoes hashbrowns. Next, layer crumbled bacon on top of potatoes. 9 large eggs
1 1/4 cups milk
1 container (8 oz) sour cream
1 teaspoon salt
1 teaspoon ground mustard
1/4 teaspoon pepper
1/2 cup cornflake crumbs or panko bread crumbs
2 tablespoons butter or margarine, melted

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
