BACON-CORN CASSEROLE

Bacon-Corn Casserole image

I have some family members who rarely eat vegetables. I have tried so many different vegetable recipes over the holidays and have been largely unsuccessful. I took an old corn casserole recipe of mother's and kicked it up. The relatives love it! It's now a holiday must have and it's so easy to do. My rule of thumb; you can't miss with bacon! -Lynn Caruso, Gilroy, California

Tips:

* Use fresh, high-quality ingredients for the best flavor. * If you don't have any bacon grease, you can substitute butter or vegetable oil. * Use a sharp knife to dice the onion and celery so that they cook evenly. * Cook the bacon until it is crispy, but not burnt. * Drain the bacon grease from the skillet before adding the other ingredients. * Use a large skillet or Dutch oven to cook the casserole so that there is enough room for all of the ingredients. * Stir the casserole occasionally while it is cooking to prevent it from sticking to the bottom of the pan. * Bake the casserole until it is bubbly and the corn is tender. * Let the casserole cool for a few minutes before serving so that it has time to set.

Conclusion:

Bacon corn casserole is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up leftover bacon and corn, and it is also a great dish to bring to a potluck or party. With its creamy, cheesy sauce and crispy bacon, this casserole is sure to be a hit with everyone who tries it.
