4 slices bacon, chopped

  • Put the potatoes in a large saucepan and cover with cold water by 1 inch. Season generously with salt and bring to a boil. Reduce the heat to medium and simmer until very tender, about 15 minutes.

Mrs. Dash seasoning mix, to taste

1/4 cup butter
1/2-1 cup beef broth
1 bunch green onion, sliced

  • Fire up your charcoal.
  • Spray the bottom of a foil pan with cooking spray. (Or if you prefer, spray aluminum foil and make this in foil packets instead).
  • Place potatoes into pan, and LIBERALLY shake seasoning blend and garlic salt on top; stir to coat.
  • Pour beef broth into pan.
  • Add bacon to the potatoes, spreading it evenly.

1 1/2 c milk, 2%
1 1/2 c heavy cream
1 tsp salt
1 Tbsp black pepper

1 tsp hot sauce
1 medium yellow onion, sliced
4 medium russet potatoes, thinly sliced
2 c cheddar cheese
6 slice bacon, cooked & crumbled
1/2 tsp paprika, sweet mild

  • 1. Slice onions into rings
  • 2. Rinse potatoes & drain then thinly slice.
  • 3. In a small pot, heat butter on medium heat until melted. Add flour. Whisk until smooth. 3 large potatoes, peeled and quartered
2 cups heavy cream
1 clove garlic, minced
1 stick unsalted butter, cut into cubes
Salt and freshly ground black pepper
1 cup shredded Monterey Jack cheese
1/2 cup shredded fontina cheese
1 tablespoon smoked paprika
4 slices bacon, cooked crispy and chopped
1 tablespoon chopped fresh chives

Steps:

  • Place the potatoes in a pot and cover with water. Bring to a boil and cook until the potatoes are very tender, 20 to 25 minutes.
  • In a small saucepan, combine the cream and garlic and bring to a simmer over low heat. Turn off the heat and let steep.
  • When the potatoes are done, press them through a potato ricer into a large bowl. Add the butter and slowly fold in the garlic-infused cream. Taste and add salt and pepper.

Steps:

  • Clean un-peeled potatoes under water to remove any dirt.
  • Poke them all over with a fork to vent while cooking.
  • Rub vegetable oil on potatoes and season with salt.
  • Microwave for 5 minutes, turn potatoes over, and microwave for an additional 5 minutes.
  • While potatoes are cooking, cut across bacon and then lengthwise to create small bits. ( I use frozen bacon) Cook in a skillet until crispy and set aside.
  • Allow the potatoes to cool until you can handle them.
  • Make a slice lengthwise on each potato and use a fork to mash the insides. ( Doesn't have to be perfect).
  • Top potatoes with shredded cheddar cheese and put back in the microwave for 1 minute or until cheese is melted.

6 garlic cloves

  • Put in large pot with cold water and add 2 cloves of garlic, slightly crushed, on stove on high.

1/2 lb bacon
3 extra large russet potatoes, peeled and chopped into 1/2 inch to 3/4 inch pieces (about 6 cups worth)
1 teaspoon kosher salt
3/4 teaspoon fresh ground black pepper
1 1/2 cups cheddar cheese or 1 1/2 cups mexican blend shredded cheese
3 green onions, sliced thin

Steps:

  • Spread the bacon strips across a large rimmed baking sheet pan and place on the middle rack of a cold oven. Set the temperature to 400 degrees. Set a timer for 16 minutes and check the bacon. Remove it from the oven when it is as crisp or crunchy as you like.
  • While the bacon is cooking, peel and chop the potatoes. Transfer the bacon to a paper towel lined plate to drain. There should be 2 to 3 tablespoons of bacon grease left on the tray. If there is more than that, drain off a bit. Put the potatoes on the tray and toss with tongs to thoroughly coat them in the bacon grease. (I cooked mine in butter--personal preference).
  • Sprinkle with salt and pepper. Spread the potatoes out in a single layer and bake for 20 minutes. Stir well and bake another 20 minutes. Stir again, making sure that none of the potatoes are sticking to the tray. Bake another 15 minutes.
  • Chop the bacon into small pieces. Remove the potatoes from the oven, stir again, and sprinkle generously with shredded cheese and chopped bacon.
  • Return the tray to the oven and bake an additional 2 to 3 minutes or until the cheese is melted. Top with sliced green onions just before serving.

6 ounces bacon, halved lengthwise, then cut crosswise into 1/2-inch pieces (about 6 slices)

1/2 cup grated parmigiano-reggiano cheese
2 garlic cloves, finely chopped
1/4 cup chopped flat leaf parsley

Steps:

  • Preheat oven to 425°F with rack in lowest position.
  • Generously cover potatoes with cold water in a 4-quart pot and add 1 tablespoon salt. Bring to a boil, then simmer, partially covered, until potatoes are just tender when pierced with a small sharp knife, about 12 minutes. Drain. Cool potatoes to warm, then peel and cut in half crosswise.
  • Cook bacon in a 12-inch heavy skillet over medium heat, stirring, until cooked through but still flexible. Drain on paper towels, reserving fat in skillet.

3 extra large russet potatoes, peeled and chopped into 1/2"-3/4" pieces, about 6 cups worth

3 green onions, sliced thin

  • COOK THE BACON: Spread the bacon strips out across a large rimmed baking sheet pan and place on the middle rack of a COLD oven. Set the temperature to 400 degrees. Set a timer for 16 minutes and check the bacon. Remove it from the oven when it is as crisp or crunchy as you like. I remove ours at 18 minutes and it's a great balance of chewy crunch. If you like your bacon crispy enough to crumble, you will probably want to cook it another minute past that. COOK THE POTATOES: While the bacon is cooking, peel and chop the potatoes. Transfer the bacon to a paper towel lined plate to drain. There should be 2-3 tablespoons of bacon grease left on the tray. (If there is more than that, drain off a bit.) Return the tray to the oven and bake an additional 2-3 minutes, until the cheese has melted. Top with sliced green onions just before serving. Enjoy!
