Pastry for a single-crust pie
3 packages (8 ounces each) cream cheese, softened
4 large eggs, room temperature, lightly beaten
1/4 cup 2% milk
1 cup shredded Swiss cheese
1/2 cup sliced green onions
6 bacon strips, cooked and crumbled
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper
Assorted crackers

Steps:

  • Roll the pastry into a 13-1/2-in. circle. Fit into the bottom and up the sides of an ungreased 9-in. springform pan. Lightly prick the bottom. Bake at 450° for 8-10 minutes or until lightly browned. Cool slightly., In a large bowl, beat cream cheese until fluffy. Add eggs and milk; beat until smooth. Add cheese, onions, bacon, salt, pepper and cayenne; mix well. Pour into the crust., Bake at 350° until set and a knife inserted in the center comes out clean, 40-45 minutes. Cool 20 minutes. Remove sides of pan. Cut into thin slices; serve warm with crackers.

1 c (4 oz) shredded swiss cheese
1/2 c sliced green onions
1 c sliced fresh mushrooms
6 bacon strips, cooked and crumbled
1/2 t salt
1/8 t pepper
1/8 t cayenne pepper
1/8 t ground/dry mustard (optional)
sour cream (optional)
salsa (optional)
additional green onions (optional)

Steps:

Beat cream cheese until fluffy in a mixing bowl; add eggs and milk and beat until smooth. Add the cheese, onions, bacon, mushrooms and spices to the cream cheese mixture and stir by hand until well incorporated. Pour into crust. Bake at 350 for 40-45 min. until a knife inserted in center comes out clean. Remove and place pan on a wire rack and cool for 20 minutes. Remove the side of the springform and cut into slices. Optional: garnish with more sliced green onions, add a dollop of sour cream, or serve with salsa.
