CORN AND BEANS AND BACON AND TOMATOES

Corn and Beans and Bacon and Tomatoes image

About as southern as it gets - lots of veggies with a layer of bacon. I suppose, in the interest of healthy eating, one could use turkey bacon. But that seems like blasphemy to me ...

Categories     One Dish Meal

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 medium onion, chopped
1 bell pepper, chopped
1 tablespoon vegetable oil
1 (16 ounce) can whole-kernel white corn, drained
1 (17 ounce) can lima beans, drained
1 (8 ounce) can tomato sauce
1 (16 ounce) can stewed tomatoes
1 tablespoon Worcestershire sauce
salt and pepper
6 -8 slices bacon (more if desired)

Steps:

  • Preheat oven to 350°F.
  • Coat an 11-inch by 7-inch casserole dish with cooking spray.

  • Cover and bake for 50 minutes, remove cover and bake 10 minutes more or until bacon crisps up.
  • *** To make using fresh vegetables:

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the flavor of the dish. Look for tomatoes that are deep red and have a slightly sweet aroma. Avoid tomatoes that are green or have blemishes.
  • Use good quality bacon: Pancetta or streaky bacon both work well. Avoid bacon that is too fatty or smoky, as it can overpower the other flavors in the dish.
  • Don't overcrowd the pan: When cooking the bacon, make sure to give it enough space so that it can crisp up properly. If you overcrowd the pan, the bacon will steam and not get crispy.
  • Cook the beans until they are tender: The beans should be cooked until they are tender but still hold their shape. This usually takes about 10-15 minutes.
  • Season to taste: Be sure to taste the dish before serving and adjust the seasonings as needed. You may want to add more salt, pepper, or chili flakes to taste.

Conclusion:

This bacon, butter beans, and tomatoes dish is a quick and easy weeknight meal that is packed with flavor. The combination of salty bacon, creamy beans, and sweet tomatoes is simply irresistible. Serve it over rice or pasta for a complete meal.
