Yield 12 cupcakes

Number Of Ingredients 9

1 bag (20 ounces) refrigerated shredded hash brown potatoes
2 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
6 eggs
2 tablespoons milk
3/4 cup crumbled crisply cooked bacon
3/4 cup shredded Cheddar cheese (3 ounces)
Sriracha sauce

Steps:

  • Mix the taters with some oil, salt and pepper. Press it all into muffin cups lined with greased foil liners. Bake the hash browns 'til they live up to their name (ya know 'til they're brown). That'll take 45 to 55 minutes. Meanwhile, whisk together eggs and milk. Stir in shredded Cheddar and some crumbled bacon Firmly press the baked hash browns with a ¼-cup measuring cup or a large spoon. This makes more room for the egg, bacon and cheese layer Add the egg mixture over the potato layer. Bake until the egg layer is set and a knife inserted into it comes out clean.

Tips:

  • Prepare Ingredients in Advance: Before starting, measure and prepare all the ingredients to ensure a smooth and efficient cooking process.
  • Use High-Quality Bacon: Opt for thick-cut bacon slices for a satisfying bacon flavor in your cupcakes.
  • Crisp the Bacon Perfectly: Cook the bacon until it reaches your desired level of crispiness, whether it's soft and chewy or crispy and crunchy.
  • Don't Overmix the Batter: Overmixing can result in tough cupcakes. Mix just until the ingredients are well combined.
  • Fill Cupcake Liners Generously: Fill each liner about 2/3 full to allow for rising during baking.
  • Keep an Eye on the Cupcakes: Check the cupcakes a few minutes before the recommended baking time to prevent overbaking.
  • Let Cupcakes Cool Completely: Allow the cupcakes to cool completely before frosting to prevent the frosting from melting.
  • Chill the Frosting: For a thicker and more stable frosting, chill it for at least 30 minutes before piping onto the cupcakes.

Conclusion:

Bacon breakfast cupcakes are a delightful and versatile treat that combines the savory flavors of bacon with the sweetness of a cupcake. With careful preparation and attention to detail, you can create these delicious and visually appealing cupcakes that are perfect for any occasion.
