BACON AVOCADO TOASTS

Provided by Food Network Kitchen

Time 20m

Yield 4 servings

Number Of Ingredients 6

2 ripe avocados, halved, pitted and peeled
3 scallions, chopped
1 tablespoon lemon juice
Fine salt and freshly ground black pepper
4 slices smoked bacon
4 slices sourdough or crusty white bread, sliced 3/4-inch thick

Steps:

  • Preheat the oven broiler.
  • Mash the avocados in a medium bowl until slightly chunky. Stir in the scallions, lemon juice, 1/2 teaspoon salt and a few grinds of pepper and set aside.
  • Arrange the bacon in a large nonstick skillet over medium heat and cook until brown and crisp, about 4 minutes per side. Transfer to a paper towel-lined plate and reserve the drippings in the skillet. Brush each slice of bread with some bacon drippings. Arrange the bread on a baking sheet, bacon dripping side-up, and broil until lightly toasted.
  • Spread each toast with 1/4 of the mashed avocado, break each piece of bacon in half and top each toast with 2 halves.

Tips:

  • Choose ripe avocados: Ripe avocados are easier to mash and spread, and they have a richer flavor. Look for avocados that are dark green or black in color, and that yield to gentle pressure.
  • Use good quality bread: The bread you use for your avocado toast will make a big difference in the final product. Choose a sturdy bread that can hold up to the toppings, such as sourdough or whole wheat.
  • Cook the bacon until it is crispy: Crispy bacon adds a delicious smoky flavor to avocado toast. Cook the bacon in a single layer in a skillet over medium heat until it is browned and crispy.
  • Season the avocado toast generously: Avocado toast is a blank canvas, so don't be afraid to season it generously. Salt, pepper, and garlic powder are all great options.
  • Add your favorite toppings: The possibilities for toppings on avocado toast are endless. Some popular options include eggs, cheese, tomatoes, and sprouts.

Conclusion:

Avocado toast is a delicious and versatile breakfast, lunch, or snack. It is easy to make and can be customized to your liking. With a few simple ingredients, you can create a delicious and satisfying meal that is sure to please everyone.
