Time 50m

Yield 8 Tarts, 8 serving(s)

Number Of Ingredients 12

8 tart shells
2 small tomatoes
1 cup low-fat mayonnaise
3/4 cup fat-free cheddar cheese
1/4 cup parmesan cheese
4 shallots
1 small onion
2 slices bacon, crispy
1 tablespoon mustard
1/2 teaspoon ground thyme
salt
pepper

Steps:

  • Heat oven to 350 degrees. Thinly slice tomatoes. Lightly salt and pepper the tomatoes. Layer the tomatoes between paper towels for ten minutes.
  • Melt the butter in a skillet. Cook onions and shallots until translucent.
  • Mix mayonnaise and cheeses.
  • Lightly brush mustard in bottom of tart shells. Layer tomatoes and onions in shells. Sprinkle the tops of each tart with crumbled bacon. Top each tart with the mayonnaise cheese mixture. Place tarts on a baking sheet. Bake for 45 minutes.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and make the cooking process smoother.
  • Use high-quality ingredients: The better the ingredients you use, the better your tarts will taste. Look for fresh, ripe tomatoes and bacon that is thick and smoky.
  • Don't overcook the bacon: Overcooked bacon will be tough and chewy. Cook it until it is just crispy.
  • Use a good pastry dough: The pastry dough is the foundation of your tarts, so it's important to use a good one. If you don't have time to make your own, you can buy a pre-made dough from the store.
  • Pre-bake the tart shells: Pre-baking the tart shells will help them to hold their shape and prevent them from becoming soggy.
  • Use a variety of tomatoes: Using a variety of tomatoes will give your tarts a more complex flavor. Try using cherry tomatoes, Roma tomatoes, and heirloom tomatoes.
  • Add some herbs: Herbs like basil, oregano, and thyme will add a pop of flavor to your tarts. Stir them into the eggs or sprinkle them on top before baking.
  • Serve the tarts warm: Tarts are best served warm, so make them just before you're ready to eat them.

Conclusion:

Bacon and tomato tarts are a delicious and easy-to-make dish that is perfect for any occasion. With a few simple ingredients and a little bit of time, you can create a dish that everyone will love. So next time you're looking for a quick and easy meal, give these bacon and tomato tarts a try.
