1/3 cup thinly sliced green onions
1 tablespoon chopped fresh thyme leaves
2 teaspoons heavy whipping cream or milk
1/2 cup chopped cooked applewood smoked bacon
6 grape tomatoes, quartered (24 pieces)

Steps:

  • Heat oven to 375°F. Line large cookie sheet with cooking parchment paper.
  • Unroll crescent dough into 12x7-inch rectangle. If using crescent rolls, press seams to seal. Cut into 6 rows by 4 rows. Place dough pieces on cookie sheet, spacing slightly apart. Bake 10 to 13 minutes or until golden brown; cool 10 minutes.

250 g cream cheese, Spreadable
3 -4 slices bacon, rind removed
80 g frozen spinach

Steps:

  • Grill bacon until well-cooked, but not crispy. If you do this on a rack above an oven tray, much of the fat will drip away. The time will vary according to the type of bacon. Cool bacon for a few minutes, then chop into very small pieces.
  • Microwave frozen spinach according to directions on the package. Drain any liquid.
  • In a medium sized bowl, mix all the ingredients together until well-blended, then transfer to a nice serving bowl.
  • Cover with glad wrap and cool in the fridge. If you can prepare this a few hours ahead of time, the flavours will intensify, but it is fine straight away.

1/2 lb bacon
1 large sliced white onion
8 eggs
1/4 c milk
1/4 tsp sea salt

3/4 c shredded cheddar cheese
2 Tbsp fresh chopped parsley
1 Tbsp fresh chopped cilantro

Steps:

  • 1. Preheat oven to 350 dF and spray a 9-inch pie plate with non-stick cooking spray.
  • 2. Heat a large skillet over medium heat and cook bacon, stirring until browned, about 10 minutes. Transfer bacon to a paper towel lined plate and discard drippings.
  • 3. Add onions and cook, stirring until onions are golden and caramelized, about 15 minutes. Remove from heat.
  • 4. Unroll pie crust, lay in bottom and up edges of prepared pie plate. With fork, poke holes in bottom and partially bake crust for 8 to 10 minutes, then remove from oven.
  • 5. Add eggs, milk, salt and pepper to a large bowl, whisking to combine.
  • 6. Layer cooked onions over bottom of partially baked crust, top with bacon pieces and cream cheese pieces.
  • 7. Pour eggs over bacon and top with cheese, parsley and cilantro.
  • 8. Bake for 30 to 35 minutes, until eggs are set and edges are browned.

1 tsp garlic minced
1 pkg medium size mushrooms (white or brown)
1/2 c italian bread crumbs
5 slice applewood bacon
1/4 c green or red bell pepper chopped
1 Tbsp butter, melted
1 tsp vegetable oil
salt and pepper to taste

Steps:

  • 1. Preheat the oven to 375 degrees F. Coat baking sheet lightly with vegetable oil.
  • 2. Remove stems from mushrooms and chop finely. Combine the crabmeat, cream cheese, parsley, green onions,celery, bell pepper, chopped mushroom stems, garlic, butter and bread crumbs. Add salt and pepper to taste .
  • 3. Stuff the mushroom caps with the mixture. Wrap each mushroom cap with 1/2 slice of bacon. (tuck end of bacon under bottom of mushroom cap)

1/2 cup chopped onions
1 cup frozen corn, thawed
1/2 cup diced bread (1/2 inch dice)
1/3 tsp salt

3/4 cup grated cheddar cheese
4 1 1/2 inch thick pork chops
1 cup chicken stock
1 tsp sage
1/4 tsp thyme
1 1/2 cups heavy cream
1/4 tsp pepper
1 tbsp minced parsley

Steps:

  • Cook bacon until crisp and drain. Set aside 2 tbsp bacon fat. In remaining fat, saute onions over medium heat until tender. Combine onions in a bowl with bacon, corn, bread, salt, pepper and cheese. Cut a pocket through to the bone in each of the chops. Compact the stuffing and push as much as possible into each pocket while still being able to close the chop. Secure opening with toothpicks. Alternative: Butterfly a 3-4 lb center cut pork loin roast. Top with double recipe of stuffing and roll. Tie with butchers string. Pork roast can be brined first, drained and patted dry if desired (omit salt from recipe if brining first). Preheat oven to 350. Heat the reserved 2 tbsp bacon fat in skillet or dutch oven. Heat pan until very hot and brown pork on all sides. Pour on chicken stock, or if using roast pour chicken stock in bottom of roasting pan. Bake until very tender, .about 1 hour for chops or 75 to 90 minutes for roast. Remove from oven, transfer pork to baking pan, cover and put back into 200 degree oven while preparing sauce. Strain chicken stock into a saucepan, add sage, thyme salt and pepper and boil until syrupy. Stir in cream and cook to consistency of light gravy. Spoon sauce over chop and top with parsley.

5 -6 squash blossoms, washed with stamens removed
3 tablespoons cream cheese
1 strip cooked bacon, diced (get the good stuff- wood smoked!)
3 basil leaves, finely diced (large)
1 teaspoon finely diced onions or 1 teaspoon scallion
fresh ground pepper
salt
2 tablespoons flour
2 tablespoons cornmeal
1 egg white
1 tablespoon water
oil (for frying)

Steps:

  • Put the cream cheese in a bowl to soften for a few minutes before you start.
  • Combine basil, bacon, salt, pepper, onion, and cream cheese.
  • Spoon about 1 tsp or a little more of the cream cheese mixture into the blossoms, depending on their size.
  • Gently twist the ends of the petals together.
  • Combine flour and cornmeal, with a little salt if you like.
  • Whisk egg white into water thoroughly.
  • Dip each blossom into the egg white mixture, keeping petals twisted, then roll it in the flour/cornmeal.
  • Place filled blossoms in the fridge for 7-10 minutes.
  • Heat 1-2" oil in a sturdy pot, to about 350 degrees F.
  • Fry blossoms until golden brown, turning occasionally.
  • Drain on paper towels and serve!
