SWEET AND SAVORY RIBS

Sweet and Savory Ribs image

My husband, Randy, and I love barbecue ribs, but with our busy schedules, we rarely have time to fire up the grill. So we let the slow cooker do the work for us. By the time we get home from work, the ribs are tender, juicy and ready to devour.-Kandy Bingham, Green River, Wyoming

Time 3h20m

Yield 4

Number Of Ingredients 11

½ cup ancho chile powder
¼ cup white sugar
¼ cup brown sugar
¼ cup salt
2 tablespoons freshly ground black pepper
1 tablespoon ground cumin
1 teaspoon dry mustard
1 teaspoon ground cayenne pepper
½ teaspoon ground dried chipotle pepper
1 rack baby back pork ribs
1 cup barbeque sauce

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix ancho chile powder, white sugar, brown sugar, salt, black pepper, cumin, dry mustard, cayenne pepper, and chipotle pepper in a small bowl until combined.
  • Place ribs meat-side down on aluminum foil. Prick back of rib rack several times with a knife.
  • Generously apply coating of dry rub to all sides of rib rack.
  • With rib rack meat-side down, fold foil around it to create a tight seal. Transfer to sheet pan.
  • Bake in preheated oven until tender and cooked through, about 2 hours. Remove and cool 15 minutes.
  • Increase oven temperature to 350 degrees F (175 degrees C).
  • Open foil, drain and discard any accumulated juices and fat. Brush barbeque sauce on all sides of rack.
  • Place rack meat-side up and return to oven, leaving foil open. Bake for 10 minutes, remove from oven, and brush another layer of barbeque sauce on meat-side only. Repeat baking and brushing with sauce 4 more times, for a total of 50 minutes baking time.
  • Cut rack into individual rib segments and serve with more barbeque sauce.

Tips:

  • Choose the right ribs: Back ribs are the most popular choice for this recipe, but you can also use spare ribs. Spare ribs have more meat, but they can be tougher than back ribs.
  • Trim the ribs: Remove the membrane from the back of the ribs before cooking. This will help the ribs cook evenly and make them more tender.
  • Season the ribs: Season the ribs liberally with a rub made from brown sugar, paprika, garlic powder, onion powder, and salt. You can also add other spices, such as cumin or chili powder, to taste.
  • Smoke the ribs: Smoke the ribs over indirect heat for 2-3 hours, or until the ribs are tender and cooked through.
  • Make the sauce: While the ribs are smoking, make the sauce. The sauce is made from ketchup, brown sugar, vinegar, Worcestershire sauce, and spices.
  • Glaze the ribs: Once the ribs are cooked, glaze them with the sauce. You can do this by brushing the sauce on the ribs or by dipping the ribs in the sauce.
  • Serve the ribs: Serve the ribs hot with your favorite sides, such as mashed potatoes, coleslaw, or corn on the cob.
