Time 40m

Yield 4 servings

Number Of Ingredients 17

2 tablespoons butter
1/3 cup finely chopped onions
1/4 cup finely diced celery
1/4 cup finely diced carrots
1 teaspoon finely minced garlic
1 cup plus 1 tablespoon flour
1 cup dry red wine
3/4 cup fresh or canned beef or chicken broth
1/4 teaspoon dried thyme
1/2 bay leaf
2 sprigs fresh parsley
Salt to taste if desired
Freshly ground pepper to taste
1 3/4 pounds fresh chicken livers
2 tablespoons ground or rubbed sage
3/4 cup corn, peanut or vegetable oil
1/2 cup finely chopped parsley

Steps:

  • Heat half the butter in a heavy saucepan and add the onions. Cook, stirring, until they start taking on a little color. Add celery, carrots and half the garlic. Cook briefly, stirring, and sprinkle with 1 tablespoon flour. Stir to blend.
  • Add wine, broth, thyme, bay leaf, parsley sprigs, salt and pepper and bring to the boil. Let simmer 20 minutes. Line a sieve and pour in the sauce. Strain, pushing through as much liquid as possible. Discard the solids. There should be about 1/4 cup.
  • Meanwhile, pick over the livers, cutting away and discarding the connecting membranes. Cut the livers in half and then into quarters. Drain thoroughly in a sieve.
  • Blend the remaining 1 cup of flour, salt, pepper and half the sage. Dredge the liver pieces in the mixture and shake off excess. Line a large mixing bowl with a large sieve and have it ready for draining the livers.
  • Heat about one-third of the oil in a heavy skillet. When it is hot add one-third of the livers. Cook, turning the pieces so that they brown evenly. Cook 2 to 3 minutes until brown and crisp on the outside. Drain.
  • Add another third of the oil. When it is hot add another third of the livers. Repeat, draining the livers as necessary and cooking until they are all brown and crisp on the outside.
  • Heat the remaining tablespoon of butter in a casserole and add the remaining tablespoon of sage and remaining half teaspoon garlic. Cook briefly and add the sauce. Bring to a boil and let simmer about 1 minute. Add the livers and cook to heat thoroughly. Stir in chopped parsley and serve.

Yield Makes 4 to 6 servings

Number Of Ingredients 12

3 tablespoons olive oil
2 or 3 thick slices bacon, roughly chopped
1 (4-pound) chicken, cut into six pieces
1 handful flour, seasoned with salt and pepper to taste
8 to 10 ounces button or cremini mushrooms, rinsed and halved (optional)
20 whole baby carrots, cut in half
1 clove garlic, peeled and minced
2 large sweet onions, chopped, or 2 cups pearl onions
1 bottle red wine (white works, too)
1 cup chicken broth
1 bay leaf
2 sprigs thyme

Steps:

  • 1. Heat the olive oil in a large pot over medium-high heat. Add the bacon and cook until crisp. Transfer to a large plate.
  • 2. Shake the chicken pieces with the seasoned flour in a paper or plastic bag.
  • 3. Brown the chicken in the pot, 4 to 5 minutes per side. Transfer to the plate with the bacon.
  • 4. Sauté the mushrooms (if using), carrots, garlic, and onions in the pot until they just begin to brown, 5 minutes.
  • 5. Pour half the wine into the pan and cook over high heat for about 8 minutes.
  • 6. Add the broth and the remaining wine. Bring to a boil and add the chicken, bacon, and herbs.
  • 7. Return to a boil, then cover and simmer for 45 minutes. Remove the bay leaf and thyme and serve.

Tips:

  • Choose the right chicken: Baby chickens, also known as Cornish game hens, are the ideal choice for this recipe. They are small and tender, with a delicate flavor that pairs well with the rich red wine sauce.
  • Prepare the chicken properly: Before cooking, rinse the chickens inside and out and pat them dry. Season them generously with salt and pepper, both inside and out.
  • Brown the chicken: Browning the chicken before braising it adds depth of flavor to the dish. Heat a large skillet over medium-high heat and sear the chickens on all sides until golden brown.
  • Make the red wine sauce: While the chickens are browning, prepare the red wine sauce. In a saucepan, combine red wine, chicken broth, shallots, garlic, thyme, and bay leaves. Bring to a simmer and let it cook for 15-20 minutes, or until the sauce has reduced by half.
  • Braise the chicken: Once the sauce is ready, transfer the browned chickens to a baking dish. Pour the sauce over the chickens and add the carrots, celery, and onions. Cover the dish and braise the chickens in a preheated oven at 350°F for 45-50 minutes, or until the chickens are cooked through.
  • Serve immediately: Once the chickens are cooked, remove them from the oven and let them rest for a few minutes before serving. Serve the chickens with the red wine sauce and the roasted vegetables.

Conclusion:

This baby chicken with red wine sauce is a delicious and elegant dish that is perfect for a special occasion. The tender chicken is braised in a rich and flavorful red wine sauce, and the roasted vegetables add a touch of sweetness and color. This dish is sure to impress your guests and leave them wanting more.
